So Spring has sprung here in Louisiana. The past couple of days have been sunny and warm with plenty of sunshine (please don't change). This means one thing in my book...it's time to get the grill going. And I do mean for everything! I have told you before, I love to grill...all times of the year, but especially right now when the weather is just right. It's a healthy way to cook and the flavor makes all dishes better. There is no exception in the case of this deconstructed shrimp Caesar salad!
Grilled shrimp skewers on a bed of fresh romaine with freshly shaved Parmesan cheese, homemade low-fat Caesar dressing, and a couple of slices of grilled delicious whole wheat bread and we are in business people.
It's the perfect throw together, healthy weeknight meal! A couple of ingredient swaps here and there and you have a yummy and low fat meal that your whole family will love! Caesar salads happen to be one of my favorite, but I don't love all of the calories that go with it...with this version you can get your flavor and cut a ton of calories!
Let's get to it!
- 1 Lb. of Shrimp
- 1 Lemon
- Salt and Pepper
- 1 Tsp. Old Bay Seasoning
- 1 Tsp. Olive Oil
- 1 Head of Romaine Lettuce
- 1/4-1/2 Cup Parmesan Cheese (freshly shaved for garnish and grated for dressing)
- Your Favorite Crusty Whole Wheat Bread
- 1/2 Cup Nonfat Greek Yogurt
- 2 Tbsp. Dijon Mustard
- 1 Tbsp. Worcestershire Sauce
- 1 Tsp. Anchovy Paste
- 2 Garlic Cloves
- Juice From One Lemon
- Salt and Pepper
- 1 Tbsp. White Vinegar
- 1 Tsp. Grated Parmesan Cheese
-Heat your grill to medium heat. Soak skewers for 20 minutes submerged in water.
-White skewers are soaking, make your dressing. Combine all ingredients into a blender or food processor and pulse until well combined. If you need to thin out, add a bit of water until it is desired consistency.
-Next, season your shrimp with your salt and pepper, Old Bay seasoning, lemon juice and olive oil and coat thoroughly.
-Skewer shrimp with a little space in between each one for even cooking (about 5-6 shrimp per skewer)
-Slice bread about 1/4-1/2 inch thick and brush both sides with olive oil and season with salt. Set aside.
-Place shrimp and bread on grill for about 2-3 minutes on each side until shrimp turn pink and the bread has nice grill marks on it.
-Take several leaves of romaine on your plate, put a couple of skewers on top of that, sprinkle with shaved Parmesan, drizzle desired amount of dressing on top and serve with the grilled bread.
This salad is a must try in my book! If you love Caesar salads, then this salad is for you and guess what?? You get to eat it without any guilt! Yeeeessss!
