Guess what time it is? Well what almost time it is? Cinco de Mayo of course! Which really just means we all get an excuse to make a delicious cocktail of some sort! Hey, whatever works right? And really what better way to celebrate than to make these refreshing mango margaritas?
I have been meaning to recreate that delicious mango margarita that we had in Miami for a while now, and finally got around to it while I was at the beach last week, and ya know what? It is pretty darn close to the one that inspired me in the first place!
You are definitely going to want to make these, I'm just going to go ahead and throw that out there. They are the perfect creaminess, sweet with a bit of tart from the lime, and a little bite from the tequila...yum! Throw it all in the blender and voila, you have yourself a party!
- 2 Ripe Mangos
- 1 Bag of Frozen Mango
- 4 Tbsp. Agave Nectar (you could use sugar also)
- 1/2-3/4 Cup of Tequila (depending on your taste)
- 1/3 Cup of Fresh Squeezed Lime Juice, plus extra lime for garnish
- Salt or Sugar for the Rim (depending on what you like better)
-Peel and chop your ripe mangos around the pit.
-Add both your frozen and fresh mangos to the blender.
-Add your lime juice, tequila, and agave.
-Fill the rest of the blender with ice to the top.
-Blend until smooth and creamy.
-Take a lime and rub around the rim of your glass, and dip the glass rim into sugar or salt.
-Pour the pureed mango margarita into the glass and garnish with another slice of lime and serve immediately!
