Asian Chicken Lettuce Wraps
I love a good weeknight meal that I can whip up fast and feel good about feeding my family! Meals that can be ready in under thirty minutes and that are on the healthier side are always a winner at my house! We happen to love Asian food and crave it on the regular, so I try to make my own versions of all my favorite recipes at home so that I can control the ingredients! My Asian chicken lettuce wraps are one of my favorite go-to dinners that my boys will gobble up in a heartbeat!
If you have ever been to PF Chang's restaurant, then you have probably had their lettuce wraps at some point or another. I fell in love with them years ago and decided I could make my own version right in my own kitchen, so that's exactly what I did.
I have made this exact recipe with pork and turkey too and both proteins are equally as delicious, so feel free so swap this recipe up with whatever ground meat you have on hand! You can even make this vegetarian by doubling the mushrooms and omitting the meat all together! Either way you do it, you are going to love fixing this dinner for yourself and your family!
Ingredients:
Filling-
1 LB Ground Chicken (ground pork or ground turkey are great subs)
1 Container of Mushrooms, stems removed and chopped small
8 Scallions, diced thin
1 Red Pepper, diced small
2 Tbsp. Fresh Grated Ginger
3 Garlic Cloves Minced
1 Can Water Chestnuts, diced small
1/4 Cup Low Sodium Soy Sauce
2 1/2 Tbsp. of Hoisin Sauce
2 Tbsp. Sesame Oil
2 Tbsp. Water
I Head of Butter Lettuce
Dipping Sauce-
1/4 Cup Low Sodium Soy Sauce
2 Tsp. Sesame Oil
2 Tbsp. Rice Vinegar
1 Tbsp. Grated Ginger
2 Grated Garlic Cloves
1 Tsp. Sirachi Sauce
Directions:
Brown your chicken in a wok or other large pan with sesame oil over medium heat.
Once chicken has browned, add scallions, ginger, garlic, red pepper, and mushrooms and sauté together for another couple of minutes until the vegetables start to tenderize.
Mix your soy sauce, hoisin sauce and water together and then pour over chicken and veggie mixture. Reduce heat and let simmer for about 10-15 minutes until flavors are combined well.
Add in water chesnuts at this time and heat through.
While the filling simmers, mix together dipping sauce ingredients and let the sauce sit so that the flavors can merry.
To serve, spoon some of the filling into a single piece of lettuce and drizzle some of the dipping sauce over top.
Add chili sauce if you like a little spice.
This recipe is also great turned into an appetizer if you are having a party! Can't wait for you to try this recipe!
