Anytime Roasted Potatoes

Happy Hump Day!  I kinda miss that camel commercial...I haven't seen it in a while.  But it always made me laugh even though maybe it really wasn't that funny.  There is just something about animals talking that always cracks me up.  Maybe it's because I used to secretly wish my pets and my stuffed animals would talk back to me when I was little and used to tell them I would keep it a secret if they did???  Yeah, that's not weird at all.  But anyway,  the good news about hump day is that the weekend is in sight and maybe you have some big Valentine's Day plans...or maybe not and that's okay too because really the best part about Valentine's Day is having an excuse to eat as much chocolate as you want and no one can judge you!  We will be staying in Saturday night to celebrate the big V-Day and will probably end up having my anytime roasted potatoes as part of our menu!

Poor potatoes.  They get such a bad wrap.  People are all like potatoes will make me fat.  And yeah they will make you fat if you smother them with butter and sour cream and cheese or deep fry them in grease.  But if you cook them right, they are quite healthy and have lots of nutritional value that your body needs like they can lower blood pressure, contain the vitamin B6 (which is good for all sorts of stuff), contain potassium, fiber...the list goes on.  And I happen to be a potato fanatic.

I like them all the ways...yes including deep fried and smothered, but I just choose not to cook them like that when I am at home!  My absolute favorite way to prepare them is to roast them. They get crispy edges, stay creamy on the inside, are salty, and make for the perfect side dish at any time of day.

I have made these potatoes for breakfast with a fried egg, for lunch with a salad, and for dinner they have become the side dish to just about everything you can think of.  Eat them plain, dip them in siracha, ketchup, BBQ sauce, whatever you like...they are delicious and healthy and you need them in your life.

Seriously though...make them asap.

Ingredients:

  • 8-10 Small Red Potatoes
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Tsp. Kosher or Sea Salt
  • 1 Tsp. Cracked Black Pepper
  • 1 Tbsp. Grill Seasoning (I use Montreal Steak Seasoning)

Directions:

  • Preheat oven to 400 degrees.
  • Line a baking sheet with parchment paper.  This is optional, but I swear it makes your potatoes crispier.
  • Cut potatoes into quarters and toss with olive oil, salt, pepper, and grill seasoning.
  • Spread out into an even layer onto the baking sheet and then bake for 45 minutes, flipping once about halfway through.
  • Serve immediately.

Can you believe how easy that is?  No lie, we have these potatoes at least once a week and everytime I love them just as much!  This is a must try side dish, but I'll let you decide if you want to cook them for brunch or dinner...or both! :)
