Y'all...it's only Tuesday and I am already dreaming of the weekend.  Parks got sick Sunday night which had us off to a rough start to the week.  And of course Mondays mean daddy goes back to work too so my Monday to-do list got pushed aside because being a mom is obviously way more important than anything else!  So, you could say I am already feeling like it should be Friday and what I could really use is a big bowl of my easy homemade guacamole with a mega sized margarita on the side!

Since taking Parks to restaurants seems like an exhausting task right now (because the kid does not want to sit still and has way more important things to be doing) sometimes I like to just create my favorites at home and enjoy them where he can run around and I can drink my cocktail before the ice melts!  

I created this easy homemade guacamole recipe for eHow and it's been a recipe I have made for years and years before that!  I know everyone has their specific way of doing it, but I'm telling you this one is my favorite!  It's made with all fresh ingredients and can be tweaked to fit your tastebuds just the way you like it!

The next time you have some guests over or just have a rough week like me, whip up a batch of this guacamole and dip away the stress!  (A good margarita doesn't hurt either!)  I like making my skinny margarita at home because it's just three ingredients that include lime juice, agave, and good tequila!  This way I can eat more chips and guac...duh!  Who's with me?

Make this guacamole as spicy or non-spicy as you like it and feel free to omit any ingredients that you don't love!  I happen to love my guac a little spicy and a little chunkier, but you can totally make it smoother if that if how you like to roll!  Serve the guacamole along side some chips, with your favorite steak tacos, or spread it on some toast with a fried egg for a delicious breakfast or lunch!  Any way you serve it up, you are going to love making easy homemade guacamole in the comfort of your own home!
