Strawberry Thyme Bellinis

This week has been spring break, which normally doesn't mean anything to me, but this year Parks' preschool is on the same schedule as all of the other schools so he has been home with me all week.  This means my work week has been interesting to say the least and I have had to let a couple of things go that were on my to-do list.  Hanging with him is way more important, but I would be lying if I said I wasn't missing my Tuesday/Thursday me time.  Luckily the weather has been absolutely beautiful so we have been able to spend lots of time outside, which is always good when you have a toddler!  You could say I am definitely ready for the weekend and for daddy to be home with us to give me a little break that I haven't been able to get this week!  I am looking forward to a cocktail (or two) and I think I'll start with one of my Strawberry Thyme Bellinis!

Last weekend we went strawberry picking and since then I have been making all of the strawberry recipes!  We picked 12 pounds so I had to make a few different recipes with them so we could use them before they all went bad!  I made strawberry bread (recipe coming soon), strawberry chia jam (from my First Bites cookbook), homemade strawberry spinach gummies for Parks, and I also whipped up a couple of these strawberry bellinis!  

Y'all, these drinks are so delicious and refreshing!  You basically make a little strawberry sorbet top it with champagne and garnish with fresh thyme and the result is a cocktail that you will want to drink all Spring long!  This cocktail is perfect for any brunch, any baby or wedding shower, or just for a gorgeous afternoon hanging out at home.  It's bubbly, fresh, and only sweetened with delicious strawberries and a little St. Germaine.

You can find me sipping on one of these pretty cocktails all weekend long!  Cheers to a little you time and to your new favorite seasonal drink!

Ingredients:

  • 1 Cup Frozen Strawberries

  • 2 Oz. St. Germaine liquor

  • 1 Oz. Fresh Lemon Juice

  • 1 Tbsp. Water

  • 4 Sprigs of Fresh Thyme

  • Champagne (can use prosecco too)

Directions:

  • Combine strawberries, St. Germaine, lemon juice, and water into a food processor or blender and process until sorbet like in consistency.

  • Divide the strawberry puree in half and then top with champagne and garnish with fresh thyme sprigs.

  • Serve immediately.

Note: Drink makes 2-3 cocktails.
