Cuban Sliders with Baked Plantain Chips

Cuban sandwiches are one of those iconic sandwiches that I love getting when I am out at a restaurant.  I find it hard to find the classic Cuban sandwich bread, so I rarely make them at home.  However, I partnered with my friends at AdapTable Meals to bring you a fun recipe that delivers the delicious flavors of a Cuban sandwich right at home without having to find special bread.  I created a recipe for out-of-this-world Cuban sliders using AdapTable Meals Santa Maria Pork Roast, complete with a side of baked plantain chips. They are the perfect combo and so tasty too!

Speaking of a no-brainer meal idea, I am not even kidding you when I say these sandwiches are 100% addicting and also super easy to make.  Tender roasted shredded pork, melty cheese, mustard, and tangy pickles get sandwiched between toasted dinner rolls for the ultimate sandwich, and each bite is better than the last.  I bake some plantain chips to serve on the side to complete the meal. My family never can get enough of this recipe.  These sliders are not only great for weeknight cooking for the whole family, but they are also great for entertaining a small group of family or friends.  I promise you that they will be a crowd pleaser every single time.

Ingredients:

  • AdapTable Meals Santa Maria Pork Roast

  • 12 Slices Swiss Cheese

  • 12 Pack Sweet Hawaiian Dinner Rolls

  • 1 Cup Sliced Dill Pickles

  • 1/4 Cup Yellow Mustard

  • 2 Tbsp. Dijon Mustard

  • 2 Tbsp. Melted Salted Butter

  • 1/2 Tsp. Paprika

  • 2 Tbsp. Finely Diced Fresh Parsley

  • 2 Green Plantains

  • 2 Tbsp. Avocado Oil

  • 1 Tsp. Kosher Salt

Directions:

  • Place AdapTable Meals Santa Maria Pork Roast with 1 cup of water or stock into a pressure cooker on the pork setting for 60 minutes or into a slow cooker on high for 4-6 hours.

  • While the roast cooks, peel plantains by making two slices lengthwise on the skin, but do not go through to the flesh of the plantain. Peel the skin off of the plantain and then slice thinly into even slices.

  • Preheat oven to 375 and toss plantains with avocado oil and salt.

  • Place onto a parchment lined baking sheet and bake for 15-20 minutes until golden brown. Let cool.

  • When the pork has cooked through and is falling apart, shred the meat using two forks.

  • Slice the dinner rolls in half keeping rolls attached to one another.

  • Mix mustards together and spread each side of rolls with the mustard mix in an even layer.

  • Layer swiss cheese on top of the mustard and then do a full layer of pickles on top of the cheese making a solid layer of each.

  • Add shredded Santa Maria roast on top of the pickles into a single layer, careful not to add too much of the cooking liquid so that the rolls don’t get soggy.

  • Add remaining cheese on top of the shredded pork and then top with the other half of the rolls.

  • Combine melted butter with paprika and brush a layer on top of the rolls.

  • Sprinkle with parsley and bake for 15-20 minutes until rolls are golden and cheese is full melted.

  • Pull apart and serve alongside plantain chips.
