Easy Blackberry Cobbler

The smell of a freshly baked cobbler in the oven is one of my favorite smells. Cobblers are such a great summertime dessert when berries and stone fruits are in season. I love cobblers because they are so easy to make and truly can be made with whatever fruits you have on hand. Easy summertime desserts are the only kind of desserts I want to make and cobblers are just that! This recipe for easy blackberry cobbler is sure to become a summer favorite!

We went blackberry picking this week and came home with almost seven pounds of berries so I knew that some baking was definitely going to happen. I immediately decided to make a blackberry cobbler because there isn’t anything better than freshly baked cobbler with some vanilla ice cream while it’s still piping hot!

There are a few variations of cobblers out there including ones that are just topped with sweet biscuits, but I prefer this method of baking the batter in with the fruit so each bite has a bit crust and berries in it. I make a batter out of flour, milk, and sugar and then add a little vanilla extract and lemon zest to brighten up the whole situation. From there, I pour the batter into melted butter right in the pan and top the whole thing off with lots of fresh blackberries to bake together and make the real magic happen!

Feel free to substitute blueberries, peaches, strawberries, or any other fruit you have on hand in this recipe. I do love blackberries because of their slightly tart flavor, but most berries or stone fruit would be delicious as well! The hardest part of this recipe is waiting until the cobbler is done cooking!

Here are some tips for making your cobbler successful:

  1. Make sure to pat your fruit dry after washing.

  2. If using frozen fruit, make sure to defrost and drain off any excess liquid.

  3. Make sure your baking powder isn’t expired. You can also substitute self rising flour here instead if you have it on hand and then you can omit the baking powder.

  4. Let the cobbler rest for a few minutes out of the oven so it can set before serving.

  5. Give the cobbler time to bake. You want a golden crust, and for the center to not jiggle too much before removing from the oven.

Ingredients:

  • 1 Cup Flour

  • 1 1/2 Cups Granulated Sugar

  • 1/8 Tsp. Salt

  • 1 Tbsp. Baking Powder

  • 1 Cup Milk

  • 1/2 Cup Melted Butter

  • 1 Tsp. Vanilla Extract

  • Zest from 1 Lemon

  • 4 Cups Fresh Blackberries

Directions:

  • Preheat oven to 350 degrees.

  • Mix together flour, sugar, salt, baking powder, milk, and vanilla and whisk until smooth.

  • Pour melted butter in a 9 x 9 casserole dish or something of similar size.

  • Add batter right to the butter and do not stir.

  • Sprinkle blackberries evenly over top of the whole batter, again not mixing.

  • Place into the oven and bake for 1 hour or until top is golden and middle of the cobbler isn’t too jiggly.

  • Remove from the oven and let sit for 5 minutes before serving with vanilla ice cream.
