Easy Buffalo Chicken Lettuce Wraps
Buffalo chicken is one of those dishes that I get a craving for on a regular basis. I love traditional buffalo wings, but I also love making my roasted buffalo cauliflower and more to satisfy the craving when the craving hits that are a bit lighter. With the Super Bowl coming up, I love the idea of making healthier options to serve to my guests in addition to some more traditional game day foods! Lettuce wraps are one of those things that you can literally put anything inside of to make a lighter option of one of your favorites. Most people think of Asian lettuce wraps only, but truly the options are endless. My easy buffalo chicken lettuce wraps are so satisfying, they make such a great appetizer for game day, and they truly couldn’t be any easier to whip up any day of the week!
I like to take a shortcut with this recipe and use a rotisserie chicken. A rotisserie chicken comes in handy so often, and I love using one for this recipe because it means you can have this whole recipe done in under fifteen minutes. I am not even kidding here, this recipe is so great because it seems like it is fancier than it actually is and literally whatever skill level you have in the kitchen, I promise you can’t mess this one up! These buffalo chicken lettuce wraps will be a recipe that you make over and over again because of how easy and delicious they truly are.
In addition to this recipe making a great appetizer, it also is super easy to meal prep for the week for easy lunches or dinners! I love that you can have zero guilt about this buffalo chicken recipe and still have 100% of the satisfaction of any other buffalo chicken recipe. There is something about the spicy buffalo chicken with the crisp lettuce, crunchy carrots and celery, and creamy blue cheese that is just the perfect bite! Ingredients:
1 Rotisserie Chicken, Shredded and skin and bones removed
1/2 Cup Hot Sauce (I used Frank’s)
2 Tbsp. Unsalted Melted Butter
1 Tsp. Worcestershire Sauce
1 Tbsp. Fresh Lemon Juice
1/2 Tsp. Salt
1/4 Tsp. Pepper
Butter Lettuce (can use romaine or iceberg too)
1 Cup Shredded or Thinly Sliced Carrots
1/2 Cup Thinly Sliced Celery
Homemade Ranch Dressing (or blue cheese)
1/4 Cup Blue Cheese Crumbles (optional)
Sliced Green Onion for Topping
Directions:
Combine hot sauce, butter, Worcestershire sauce, lemon juice, salt, and pepper in a small saucepan and whisk to combine until butter is melted and sauce is smooth. Turn off heat.
Add 1/2 of the sauce to the shredded chicken in a large bowl and toss to coat the chicken.
Place a spoonful of the buffalo chicken in the middle of butter lettuce leaves and then top with carrots and celery.
Drizzle with ranch dressing, a little more buffalo sauce and then sprinkle with blue cheese and green onions. (You can also serve dressing and extra sauce on side for guests to add.)
Serve immediately.
