Easy Panko Crusted Baked Cod Fish
I made this Easy Panko Crusted Cod Fish last week on Instagram and I had an overwhelming response of people wanting the recipe for it! I can see why because not only is it delicious, but it could not be any easier to make (fifteen minutes easy to make). It was one of those recipes that I made by accident a few months back that turned into one of my favorite fish recipes! It’s my go-to weeknight meal lately and even my three year old gobbles his fish right up! It can be easily served with your favorite vegetable of choice to make a super simple and healthy meal that can be made on even the most exhausting of days! This easy panko crusted baked cod fish is going to be your new favorite way to serve fish up to your family!
When I was growing up my mom took my brother and I to Long John Silver’s every now and then (please tell me you know what Long John Silver’s is), and I loved getting extra “crispies” with mine. Basically crispies were just little extra fried bits of fish fry that were crunchy and so delicious! But anyway this crispy panko topping reminds me of those crispies, but way healthier! My son literally says “mmmm” while he is eating this fish every single time so you know it’s good! Even though he tends to be a kid who will eat fish anyway, I have never heard him actually say how delicious while eating it until he ate this fish!
With essentially five ingredients, you can take your cod from good to great and make it feel just a little bit more special to change up your weekly fish routine and to get your family on board with it too! You can also do this with other fish besides cod, so feel free to switch it up based upon what fish you can find! My two other picks to try would be salmon or halibut! Cod however, is a mild white fish and is great for people who don’t like a “fishy” fish and tends to go over well with children and adults alike!
You just can’t beat how easy and delicious this recipe is! I am telling you I have made it three weeks in a row, and am still not tired of it! I can’t wait for you to give this one a try!
Ingredients:
2 Lbs. Fresh Wild Caught Cod (about 6, 3” Pieces
1 Cup Panko Bread Crumbs
2 Tbsp. Avocado or Olive Oil
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
1 Tsp. Fresh Parsley (optional)
Fresh Squeeze of Lemon
Directions:
Preheat oven to 425 degrees.
Pat cod dry with paper towels to get rid of any excess moisture.
Season Cod Fish with 1/2 of the salt and pepper.
Mix panko bread crumbs with oil, and the rest of the salt and pepper and stir to combine.
Sprinkle 2 Tbsp. of bread crumb mixture over fish and press on top of the fish pieces.
Bake for 12-14 minutes until bread crumbs are toasted and fish is cooked through.
Sprinkle with parsley and a squeeze of lemon if desired.
Note: You an divide this recipe in half for a smaller portion and
