Easy Peach Galette
If you love pie, but are intimidated to make one at home, a galette is the way to go. Its a much simpler, rustic way to get your pie fix and honestly even an inexperienced baker can do it. Summertime is my favorite time of year to make a galette because summer fruit is my favorite. Peaches in particular are one of my favorite summer fruits to bake with and using them in this galette is the way to go. My recipe for this easy peach galette is one you are going to want to make for the rest of the summer.
I am making this recipe super easy for you because you can use a store bought pie crust! I mean of course you can make your own also, but let’s take the shortcut where we can get it. This means that if you keep a couple of pie crusts on hand (they freeze great), you can whip up an easy and delicious galette with whatever fruit you might have on hand.
This is one of the simplest desserts and it just takes a few steps, ingredients you probably have in your pantry, and some fresh peaches to create the ultimate summer dessert. I love serving it hot with some vanilla ice cream, but you could also make some whipped cream to dollop on top as well. It’s one of those desserts that everyone is impressed with, but that literally could not be any easier to make.
Of course if you are not a peach fan feel free to use plums, berries, or cherries instead. BUT if you are. a peach fan, this recipe is for you!
Ingredients:
1 Store Bought Pie Crust (or homemade)
3 Large Peaches
1 Tbsp. Corn Starch
1/2 Cup Brown Sugar
1 Tsp. Vanilla Extract
1 Tsp. Lemon Juice
1 Tsp. Cinnamon
1/2 Tsp. Ground Ginger
1/8 Tsp. Salt
1 Tbsp. Cream or Whole Milk
1 Tsp. Coarse or Granulated Sugar
Directions:
Preheat oven to 375 degrees.
Let pie crust sit at room temperature for 10 minutes until pliable.
Meanwhile slice peaches and mix together with corn starch, brown sugar, vanilla extract, lemon juice, cinnamon, ginger, and salt and stir to combine.
Roll out pie dough just slightly and add filling to the dough, leaving 2 inches around the dough for folding over.
Fold over the edges over the peaches so that the filling does not run out.
Brush the crust with cream or milk and then sprinkle sugar on top of the crust.
Bake for 45-55 minutes until crust is golden and peaches are bubbly.
Serve with vanilla ice cream while warm.
