Easy Slow Cooker Pork Roast

Fall is here and it’s time to break out those slow cookers y’all! I honestly always forget how much I love my slow cooker until I use it and realize just how easy it makes weeknight dinners. I know Instant Pots are all the rage, but I just can’t stop using my slow cooker. There is something about the smell of cozy food cooking all day long and filling the house with delicious smells that just makes me so happy. One of the recipes I make the most in my slow cookers is a classic pot roast. This is a meal that my mom made me growing up and it happens to be one of my husband’s favorite fall meals! My Easy Slow Cooker Pork Roast is full of flavor, easy to make, and you can make multiple meals out of it for the whole week.

There is nothing more comforting than a roast dinner in the fall. It is a stick to your ribs kind of meal and I think that’s why I only make it when the weather starts to cool down a bit. My easy slow cooker pork roast is a recipe that you can make on a Sunday afternoon to have for a Sunday supper and then make an entire meal out of the leftovers another night in the week. I also love making it on a weeknight because I can drop all of my ingredients into the slow cooker and forget about it until dinner time which is so great for busy days and schedules this time of year!

I love using pork in this recipe, but I also make this exact same recipe with beef too, so feel free to use what you and your family prefer! As far as cuts of pork, I have used everything from a lean pork loin to the more common roast cuts like a shoulder or a butt. I have had success with them all, so again, use what you prefer or have on hand. Whichever cut of meat you use, it will have tons of flavor from cooking in the broth and will be so tender from cooking low and slow for hours so you really can’t go wrong.

I grew up eating potatoes with my roast, but my husband grew up in Louisiana where rice was served with roast and I gotta say, I’ve been converted into a rice and roast kind of gal! You can add potatoes to this recipe if you prefer roast and potatoes instead of rice. A great tip is to take about 1/2 cup of the seasoned stock after the pork is cooked through and make a simple gravy to put on top. I simply mix 1 teaspoon of flour and about 1/4 cup warm water and shake until smooth. I then whisk the flour mixture into the stock and bring to a simmer until thickened slightly and season with a little bit of salt and pepper. It’s so yummy to pour over the roast and veggies to finish the dish.

Ingredients:

  • 5-6 Lb. Pork Shoulder, Pork Loin, or Pork Butt

  • 10 Carrots, Peeled and Cut in Half

  • 2 Cups Mushrooms (Baby Bella or Button work great here)

  • 1 Onion, Quartered

  • 6 Peeled Garlic Cloves

  • 4 Celery Stalks, Cut in Half

  • 3-4 Cups Stock or Water

  • 2 Tbsp. Kosher Salt

  • 2 Tsp. Black Pepper

  • 1 Tbsp. Avocado Oil

  • 6 Sprigs of Fresh Thyme or 1 Tsp. Dried Thyme

  • 1 Bay Leaf

Directions:

  • Season both sides of the pork shoulder with half of the salt and half of the pepper and rub into the pork.

  • Heat a large skillet over medium high heat and add avocado oil. Add pork when skillet is hot and brown on all sides, about 5 minutes per side until a nice color has formed.

  • While the pork is browning, add half of the vegetables to the bottom of the slow cooker.

  • Place browned pork on top of the vegetables and then place the remaining vegetables on top and around the pork.

  • Season with the rest of the salt and pepper and then add thyme and bay leaf.

  • Pour stock into the slow cooker and fill it about halfway up the pork and veggies.

  • Cover and cook on low for 8-10 hours until meat is fall apart tender.

  • Shred pork and serve with the cooked carrots and mushrooms and a side of steamed green beans if desired.

Note: You can add red potatoes to the slow cooker as well or sub any other hearty vegetables that you prefer.
