Easy Summer Fruit Icebox Cake
You know those recipes that are so simple that they are almost not even a recipe at all? Those are actually my favorite types of recipes because even though they are ridiculously simple, they are usually the ones people love the most. I especially love these no recipe, recipes when it comes to dessert. Icebox cakes are one of those recipes that could not be any easier to make but are always a hit with the crowd. I love that you can make them with a variety of flavors simply based on what you have on hand in your fridge and the result is always going to be delicious. My easy summer fruit icebox cake is a dessert recipe that you are going to want to make over and over and your whole family will love.
There is actually a cake I love called a berry chantilly cake and it’s one of my most favorite cakes because of the whipped cream like icing that is on top, a light and airy cake, and the fresh berries with every bite. It’s not too sweet, but yet still satisfies my sweet tooth. This icebox cake tastes so similar to that exact cake, but the best part is there is no baking involved! I layer graham crackers, freshly whipped cream, and a variety of my favorite summer fruits to make a cake that couldn’t be more perfect for summertime!
It’s called an icebox cake because you have to refrigerate it before eating it. I like to make it the morning of the day that I plan on serving it because I like my graham crackers to have a little bit of texture still, but you can definitely do this the night before as well. I find that it is best eaten within two days for it’s best texture personally, but you can decide that for yourself.
I love using fresh cherries and a variety of berries here, but you can also use peaches or even go tropical with pineapple and mango! The possibilities are endless truly which is what I think is so brilliant about icebox cakes in general. The one thing I do think is a mandatory is making the homemade whipped cream. I mean sure you can buy the stuff in the stores, but to me there is no comparison to homemade whipped cream. So since you don’t have to bake anything, go ahead and take a few minutes to whip up some fresh cream, I promise you won’t regret it!

Ingredients:
4 Sleeves of Graham Crackers ( about a box and a half)
2 Cups Whipping Cream
1/2 Cup Powdered Sugar
1 Tsp. Vanilla
1 Cup Strawberries
1 Cup Cherries
1 Cup Blackberries
1 Cup Blueberries
1 Cup Raspberries
Directions:
Put whipping cream, powdered sugar, and vanilla in stand mixer bowl and mix on medium high speed until it starts to firm. You can also use a handheld mixer here.
Continue mixing until the whipping cream has formed stiff peaks, which usually takes 1-3 minutes.
Layer graham crackers in a single layer on the bottom of a 9 x 13 cake pan or baking dish.
Top with about 1/3 of the whipped cream in a single layer followed by a layer of fruit sprinkled evenly over top.
Repeat this layering process of graham crackers, whipped cream, and fruit until you end with a layer of whipped cream and the pan is filled to the top. Usually about 3-4 layers.
Refrigerate for at least two hour or up to overnight.
Top with more fresh fruit before serving. Cake is best eaten within 2 days.
