Gluten Free Chocolate Covered Strawberry Pie
Do you celebrate Valentine’s day at home or do you go out with your significant other or girlfriends? We typically stay home and I make a special meal for me and my hubby to enjoy after our kiddo goes to bed! I usually don’t make dessert to go with our meals, but because it’s a special occasion I like to have a little something sweet for after dinner. My hubby loves a pie and so I came up with the ultimate Valentine’s Day pie to surprise him with that is not only easy to make, but is on the lighter side too! Chocolate covered strawberries are the quintessential Valentine’s Day treat, and I turned that same idea into a lovely pie perfect for celebrating love! My gluten free chocolate covered strawberry pie is going to score you big points this Valentine’s Day with your partner or your best gals!
I like baking, but I don’t like complicated baking. Ya feel me? That’s why I created this recipe for all of you “I want to make something homemade, but don’t want to risk a failed recipe” peeps out there! I’m totally right there with you! I love that this pie can be made in roughly an hour and that includes the cooling of the crust time and not to mention its the perfect amount of sweet to satisfy your sweet tooth cravings.
True story I typically just make homemade chocolate covered strawberries for Valentine’s Day (because hello, simple) which is how I came up with the idea for this pie. I also didn’t want to make a pie that was too unhealthy since we have really been trying to stick to our meal plans the past couple of weeks, so I compromised with this delicious and slightly healthier pie! It’s got a fluffy whipped cream filling that is delicately flavored with fresh pureed strawberries and the crust is an almond flour chocolate crust that is the perfect texture to go with the whipped filling. I top it with a few chocolate covered strawberries, because…why not, and the result is so so good.
My chocolate covered strawberry pie feels special, but the best part is that it won’t stress you out and your loves will absolutely approve of this menu addition! I can’t wait for you to make it for yourself!

Ingredients:
2 1/2 cup Blanched Almond Flour
1/2 Cup Coconut Sugar
1/3 Cup Unsweetened Cocoa Powder
1/4 tsp Salt
1/4 Cup Melted Unsalted Butter
1 Large Egg
1/2 Tsp. Vanilla Extract
1 Tbsp. Coffee (can omit, but it brings out the chocolate flavor)
For the Filling-
1 Cup Heavy Whipping Cream
1/4 Cup Powdered Sugar
1 Tsp. Vanilla
1 Cup Strawberries
1 Tbsp. Honey or Maple Syrup
Chocolate covered strawberries for topping.
Directions:
Preheat oven to 350 degrees.
Mix almond flour, coconut sugar, cocoa powder and salt in a large bowl and whisk to combine.
In another bowl combine butter, egg, vanilla, and coffee and whisk to combine.
Fold wet ingredients into dry ingredients until it resembles wet sand.
Press the crust into the bottom of a pie dish evenly.
Using a fork poke holes in the bottom of the crust and then bake for 15-17 minutes until crust is cooked.
For the filling puree strawberries and maple syrup until smooth.
In another bowl, beat whipping cream on high with powdered sugar and vanilla until stiff peaks form.
Slowly and gently fold the pureed strawberries into the whipped cream mixture.
When the crust comes out of the oven, let it cool completely.
Fill the pie crust with the whipped cream filling.
Freeze for 30 minutes or refrigerate for at least an hour to set the pie.
Top with chocolate covered strawberries and serve immediately.
