Golden Milk Overnight Steel Cut Oats

For the first two weeks of January I was having a hard time getting out of holiday mode and back on track with regular everyday life. I talked to so many people who felt the same way this year and finally this week I started feeling like myself again in all aspects of my regular routine. I got back to eating real food, moving my body daily, and most importantly I got my work mojo back! One of the ways I like to stay on track is by starting my day off with a healthy and filling breakfast that gives me energy to power through the day! Oatmeal is a great way to start you day and you can add just about anything you want into a bowl and make it work! My golden milk overnight steel cut oats are a great way to ensure you have a nutritious breakfast any day of the week!

Are you a fan of golden milk? Its traditionally a drink that combines coconut milk with warm spices including turmeric, and is full of nutritional benefits! Turmeric is anti-inflammatory and a great source of antioxidants, while cinnamon can reduce heart disease and help regulate and lower blood sugar levels! Golden milk is a great afternoon pick me up, and the flavors are so delicious I knew they would be perfect for a cozy bowl of oatmeal to start my day!

What I love about these oats is that you can eat them chilled or heat them up depending on your preference. If I have time I love eating them warm because all of the spices really come through and it’s just perfect warm on a chilly morning. Overnight oats are so brilliant because you can prep them in advance, so no excuses about no time for a healthy way to start your day!

With steel cut oats in particular, you can make them a couple of days in advance and they will keep their texture and have the least possibility of becoming mushy compared to traditional rolled oats. However you can definitely substitute gluten free oatmeal or old fashioned oats if preferred.

Ingredients:

  • 1 Cup Steel Cut Oats

  • 1 1/2 Cup Coconut Milk

  • 1 Tsp. Coconut Oil

  • 1/2 Tsp. Ground Cinnamon

  • 1/2 Tsp. Turmeric (fresh or ground)

  • 1/4 Tsp. Ground Cardamon

  • 1/4 Tsp. Ground Ginger (can use fresh here as well)

  • 1/4 Tsp. Salt

  • Crack of Black Pepper (helps with turmeric absorption in your body)

  • 1 Tsp. Flax Seeds

  • 1 Tsp. Chia Seeds

  • 1 Tbsp. Raw Honey or Maple Syrup

  • Fruit and/or nuts for topping

Directions:

  • In a mason jar or air tight container combine all ingredients except the toppings and stir until combined.

  • Layer toppings on top and then seal the container and place into the fridge for overnight.

  • The oats will be ready to eat the next morning or can be heated before serving.

Note: If using old fashioned oats, texture will be different and you may have to adjust liquid to oat ratio.
