Grilled Chicken Muffuletta Sliders

Muffulettas are a classic sandwich made in New Orleans that originally originated in Sicily, but has become known as a quintessential Louisiana sandwich. I created a slider version with grilled chicken that is perfect for entertaining on game day or serving up as an appetizer that your friends and family will love using Tony Chachere’s chicken marinade. These sliders are filled with juicy chicken cutlets, Italian meats, melty provolone cheese, and an olive spread that makes the sandwich all come together. These grilled chicken muffuletta sliders are going to quickly become your new favorite sandwich to serve up for tailgating and more.

Traditionally muffulettas are served up on a specific type of bread made just for the sandwich, but since that bread can be hard to find, these sliders are made on Hawaiian rolls. They are just perfect for serving up an appetizer sized muffuletta and I love the hint of sweetness the rolls have as well. I added grilled chicken to these sliders because the flavor from the chicken marinade by Tony Chacheres adds so much flavor that pairs so well with the other flavors in the sandwich, plus it adds extra protein too!

The muffuletta olive spread is an absolute must and honestly could be used as a dip as well because it’s just that good. It’s made up of two different kinds of olives, artichokes, roasted red bell pepper, celery, green onion, parsley, Cajun seasoning and more and gets slathered all over the sandwich creating a layer of flavor that is unmatched!

Simply bake the sandwich to melt the cheese and toast the bread and you have a muffuletta slider that is absolutely irresistible.

Variations of this recipe:

  • Use any 3 mixes of Italian meats that you prefer. I love the mix of mortadella, ham, and salami, but you could also mix in pepperoni or prosciutto if desired.

  • Instead of Hawaiian rolls, use slider hamburger buns, or ciabatta buns.

  • Instead of grilling the chicken, feel free to bake it in the oven or cook it in a skillet.

Tips:

  • Make the olive spread in advance and keep in the refrigerator until ready to assemble sandwiches.

  • Wait to make these sandwiches until ready to serve so that the sandwiches do not get soggy.

  • To further prevent sogginess, you can add an extra layer of Italian meat slices on top of the spread before adding the bread top and finishing baking.

Grilled Chicken Muffuletta Sliders

Ingredients:

  • 1 Pack of Hawaiian Slider Rolls

  • 6 Thinly Sliced Chicken Breasts, Cut in Half

  • 1 Bottle Tony Chachere’s Chicken Marinade

  • 1/4 Lb. Mortadella

  • 1/4 Lb. Ham

  • 1/4 Lb. Salami

  • 8 Slices of Provolone Cheese

  • 1/4 Cup Melted Butter

  • 1 Tsp. Tony Chachere’s Original Creole Seasoning

For the Spread-

  • 1 Cup Mixed Olives (green and kalamata)

  • 1/4 Cup Marinated Artichokes

  • 1/4 Cup Roasted Red Bell Peppers

  • 2 Green Onions

  • 1 Garlic Clove

  • 1 Stalk Celery

  • 1 Tsp. Dried Oregano

  • 1 Tbsp. Fresh Parsley

  • 2 Tbsp. Red Wine Vinegar

  • 1/4 Cup Olive Oil

  • - Tbsp. Tony Chachere’s Original Creole Seasoning

Directions:

  • Preheat grill or grill pan to medium heat and pour Tony Chachere’s Chicken Marinade over the chicken and let sit.

  • Place the chicken onto the grill and grill on each side for 3-4 minutes until cooked through.

  • Meanwhile make the muffuletta spread by combining olives, artichokes, roasted red bell peppers, green onions, garlic, celery, oregano, parsley, vinegar, olive oil, and creole seasoning in a food processor and process until desired consistency.

  • Preheat oven to 350 degrees.

  • Slice the rolls in half through the center.

  • Layer grilled chicken and then slices of mortadella, ham, salami and then provolone cheese on the bottom half of rolls.

  • Place onto a baking sheet and into the oven until the cheese is melty.

  • Meanwhile melt butter and creole seasoning and brush over the tops of the rolls.

  • Add muffuletta spread in an even layer on top of melty cheese. 

  • Place the tops onto the bottom half of the rolls with melted cheese and spread and bake for another 10-15 minutes until golden.

  • Serve immediately.
