Homemade S'mores Ice Cream

One of my favorite things to make in the summertime is ice cream. There are endless possibilities for flavors and I have created a simple recipe that anyone can do right at home with their own ice cream maker. S’mores are one of those nostalgic desserts that bring me back to summertime and my childhood after a long day of play. Isn’t it funny how food can bring up memories like that? It’s one of my favorite things about creating recipes. There is something so amazing about a gooey marshmallow sandwiched between melty chocolate and graham crackers that is just the best! I took that same delicious combo and created a homemade s’mores ice cream that should be the official ice cream of summer and I can’t wait for you to try it out!

Homemade vanilla ice cream gets swirled with chunks of chilled s’mores sandwiches to create the ultimate summer treat! My hubby, who don’t get me wrong loves ice cream, but usually has self control (unlike me) had two bowls the first night I made this. He actually said it might be his favorite ice cream of all time. Now that’s a statement…

But I get it.

It truly is one of those perfect ice creams that isn’t too sweet, has good crunch throughout, and just makes you happy! You get chewy bites of toasted marshmallow, chocolate, and graham crackers and it’s just the most epic flavor in ice cream form! I actually have one serving stashed in my freezer just waiting for me when I need a little treat for myself because if I didn’t hide it, my boys would eat it all! I am thinking another batch is going to happen this weekend, and maybe every weekend throughout the rest of the summer!

I make an ice cream base that is egg free, so you don’t have to worry about tempering eggs or any of that jazz! It’s super easy and you are going to be hooked with this recipe! You do need an ice cream maker for churning, but now you can get them super affordable if you don’t already have one! I have had the same Cuisinart ice cream maker since my hubby and I got married 11 years ago, so it’s a great investment and I truly use it all summer long!

Ingredients:

  • 2 Cups Whole Milk (need whole milk here for the fat content)

  • 2 Cups Heavy Whipping Cream

  • 1/2 Cup Granulated Sugar

  • 1, 1/2 Tsp. Pure Vanilla Extract

  • 8 Graham Cracker Squares

  • 8 Large Marshmallows

  • 2 Dark Chocolate Bars

Directions:

  • Make ice cream base by combining milk, sugar, and vanilla in a saucepan over medium low heat until sugar is fully dissolved.

  • Stir into heavy cream well and then chill for at least 4 hours or overnight.

  • Meanwhile place marshmallows onto a parchment lined baking sheet and place in the oven on broil for 2-3 minutes until just toasted. Watch them carefully because they go from toasted to burnt in a second!

  • Make 4 s’mores by layering 1/2 chocolate bar each on 4 squares of graham crackers and them place 2 hot toasted marshmallows on top of the chocolate and then place another graham cracker square on top and press gently until all 4 s’mores have been made.

  • Chill the s’mores for at least 30 minutes until chocolate and marshmallows are cooled completely.

  • Add ice cream base to the ice cream maker and follow instructions.

  • Chop chilled s’mores into small chunks reserving a bit for topping.

  • When the ice cream is almost done churning, (mine takes about 30 minutes), slowly add in s’mores chunks until combined throughout.

  • Place ice cream into an airtight container, sprinkle with reserved s’mores bits, and chill for another 4 hours or overnight and serve!
