Mediterranean Baked Fries with Feta Dip
I have never met a potato I didn’t like and fries have their own category of deliciousness if you ask me. I love making fries at home because I can bake them right up and don’t have to feel guilty about eating half the pan. I accidentally made the best fries one night for our dinner and knew that I had to create a recipe for y’all asap. We happen to love mediterranean flavors in our house and this blend of spices really take these baked oven fries to the next level. On top of that I created a feta dip that is going to not only become your new favorite fry dip, but your new favorite spread for all of the things. This recipe for Mediterranean baked fries with feta dip is one that you simply must try.
I am a huge fan of oven baked fries, you could of course do these in an air fryer if you have one, but if you don’t no worries, your oven will work just fine! The key to oven baked fries is to give them enough room on the pan so that they have room to get crispy rather than steam in the oven. When you overcrowd your pan, the fries end up creating moisture and will steam rather than roast which means they will come out soft every time. This Mediterranean spice blend really gives the fries an extra delicious flavor and it just pairs so well with the feta dip.
Speaking of the feta dip…OMG!
You guys are going to flip out over this one. I mean sure it’s delicious paired with these fries, but you are going to want to put it on ALL the things. Spread it on a burger, a sandwich, make a veggie platter out of it, you name it and I can guarantee it will be delicious. I blend feta with Greek yogurt, lemon, spices, garlic, and olive oil for the the most irresistible dip that you are going to want to keep in your fridge at all times.

Ingredients:
2-3 Russet Potatoes
2 1/2 Tbsp. Olive Oil
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
1/4 Tsp. Dried Thyme
1/4 Tsp. Dried Oregano
1/4 Tsp. Dried Dill
1/4 Tsp. Garlic Powder
For the feta dip-
8 oz. Feta Cheese
1/2 Cup Whole Milk Greek Yogurt
3 Tbsp. Mayonnaise
1 Garlic Clove
Juice from 1 Lemon (about 3 Tbsp)
2 Tbsp. Fresh Dill
1/4 Tsp. Red Pepper Flake
1/4 Tsp. Dried Thyme
1/4 Tsp. Dried Oregano
1/4 Cup Extra Virgin Olive Oil
1/4 Tsp. Salt
1/2 Tsp. Black Pepper
Directions:
Preheat oven to 425 degrees.
Cut potatoes into even sized fries and toss with olive oil, salt, pepper, thyme, oregano, dill, and garlic powder until evenly coated.
Place in a single layer on a parchment lined baking sheet and bake for 35-45 minutes until golden brown, flipping carefully halfway through so both sides get equally as crispy.
Meanwhile make the dip by combining feta, Greek yogurt, mayo, garlic, lemon juice, dill, red pepper flake, thyme, oregano, olive oil, salt, and pepper into a food processor or high powered blender and process until creamy and smooth.
Remove fries from the oven when ready and serve with a liberal amount of feta dip.
