My Diary of Us Supper Club: Citrus Vanilla Yogurt Bowls and Creamsicle Smoothies
In case you haven’t heard, this week I am hosting my first ever Supper Club over on Instagram! We are getting to know each other better and diving into what it looks like to feed your family on a regular basis, which includes snack time and more! I want to know what struggles you are having while getting your family to eat healthy and nutritious meals whether that’s because of time, lack of knowledge, or anything in between! We will also be talking about family meal time successes. I want to know what works for you, your schedule, and your life! I’m featuring my citrus vanilla yogurt bowls and my creamsicle smoothies from my cookbook, Natural Baby and Toddler Treats for two easy snack time recipes that can double as a healthy breakfast too!

My citrus vanilla yogurt bowls are one of those smart snacking ideas that I love using Sunrays citrus in! These bowls double as an amazing snack or breakfast for both adults and kids alike and you can top them with all of your favorite add ons! Plain yogurt gets naturally sweetened with sweet mandarin juice and vanilla and then topped with even more citrus and along with any other crunchy extras that you might like! I personally like to add homemade granola, a bit of dark chocolate, chia seeds, and shredded coconut! Your whole family will love how satisfying a yogurt bowl can truly be! I serve my son yogurt bowls, deconstructed style and then he can put his own own toppings on, which makes it extra fun for kiddos!
Besides, just eating Sunrays mandarins like candy (and in yogurt bowls of course), smoothies are the other way I love to use them! My creamsicle smoothie from the cookbook will take you back to your childhood. This smoothie could easily pass as a dessert, but is actually super healthy for an afternoon snack or easy breakfast on the go! I also like to take this smoothie and freeze it into popsicles for a yummy treat on a warm afternoon! It truly is so delicious and I can’t wait for you to give this one a try!
Citrus Vanilla Yogurt Bowls:
Ingredients:
1/2 Cup Whole Milk Plain Greek Yogurt
1/2 Tsp. Sunrays Mandarin Zest
1 Tbsp. Freshly Squeezed Sunrays Citrus Mandarin Juice
1/4 Tsp. Vanilla Extract (optional, can sub vanilla beans here)
1/4 Cup Sunrays Citrus Mandarin Segments
1 Tbsp. Chia Seeds
Toppings of choice (granola, dark chocolate chunks, shredded coconut, dried fruit)
Directions:
Combine yogurt, mandarin zest, mandarin juice, and vanilla extract in a small bowl and whisk well.
Top the flavored yogurt with fresh Sunrays mandarin slices, chia seeds.
Serve immediately or prep the flavored yogurt in advance and simply top with desired toppings when ready to serve.
Creamsicle Smoothies:
Ingredients:
3 Sunrays Mandarins (I like to peel and freeze them for a creamier smoothie)
1 Frozen Banana
1/2 Cup Kefir
1/2 Cup Unsweetened Vanilla Almond Milk
1 Tsp. Honey (for babies over 1 year) or Maple Syrup
4 Ice Cubes
Directions:
Add all ingredients into a high powered blender and blend until smooth and creamy.
Drizzle more kefir over top and serve immediately.
Note: Can freeze extra smoothie into popsicles!
