Peppermint Dark Chocolate S'mores Bars
December is just a few days away and I am in full on holiday mindset already! There is something that happens to my brain right after Thanksgiving and I suddenly just want to bake holiday treats, watch Christmas movies, and sit by the tree sipping hot cocoa all day everyday! I know that this is very unrealistic and work has to be done, along with mom duties, and other responsibilities, but I always have to try extra hard to be focused in the month of December! Can you relate? Well either way, I have a must make holiday treat for you that you are going to want to make all holiday season long! My peppermint dark chocolate s’mores bars are super easy to make, are so festive, and delicious that I know you are going to love them so much!
I mean who doesn’t love a good s’more? Graham crackers, melty chocolate, and toasted marshmallows are a dynamite combo and I think they should be enjoyed all year long! I “holidayed” up the flavors and made them into easy bake bars so that they can be taken to any holiday gathering this year to be enjoyed by all of your friends and family!
My hubby has been giving me a hard time lately because he is trying to stay on track with his diet, meaning no sugar and not very many carbs and I keep ruining it because he gets home and I will have made another batch of something delicious! (OOPS) I say that’s what you get being married to a girl who cooks for a living! He doesn’t HAVE to eat it right?
I really have to twist his arm every time let me tell ya!
Anyway, these bars are 100% and have a graham cracker crust that is layered with dark chocolate, crushed candy canes, and toasted marshmallows that you can do right in your oven, so no campfire needed! They are delicious served warm and gooey, but I also kind of love them after they have been in the fridge too! So you can definitely make them in advance this way for a holiday party!

Ingredients:
15 Graham Crackers
1/2 Cup Melted Unsalted Butter
1/4 Cup Brown Sugar
Pinch of Salt
2 Cups Dark Chocolate Chips
2 Cups Large Marshmellows
1/2 Cup Crushed Candy Canes
Directions:
Preheat oven to 350 degrees.
Pulse graham crackers in a food processor until they are the consistency of brown sugar.
Mix crushed graham crackers, butter, brown sugar, and salt together until the texture resembles wet sand and then press into the bottom of a bread pan that has been lined with parchment paper (optional but makes removing the bars easier) and make sure the graham cracker crust doesn’t have any cracks in it.
Place into the oven for 10 minutes until golden brown and then remove from the oven.
Pour chocolate chips over top of the warm graham crust and spread into an even layer.
If needed place back into the oven for 1-2 minutes to help the chocolate melt and then spread until smooth.
Sprinkle with crushed candy canes and then top with marshmallows.
Switch oven to boil and place bars into oven on broil for 2-3 minutes until the marshmallows are golden.
Remove from the oven and garnish with a few more crushed candy cane sprinkles.
Let cool slightly and then slice and serve warm if desired.
Note: These bars are also delicious out of the fridge or at room temperature.
