Shrimp Spring Roll Salad

I love taking traditional recipes and turning them into something new. Spring rolls are one of my favorite takeout items, but for some reason I never make them at home! I love that they are light, packed with flavor, and usually packed with veggies too! If you saw my Spicy Garlic Sesame Chicken post, then you already know that I am currently obsessed with my Ecotierra Organic Sesame Oils! They have become one of my favorite oils to keep in my pantry and I have been using them for everything from sautés to dressings! One of my new favorite recipes that I have been making is my Shrimp Spring Roll Salads that has everything that I love about a traditional spring roll, but deconstructed in salad form!
This recipe is such an easy one for any night of the week and makes for one stunning presentation too! I used PURA Collective Ecotierra Organic Toasted Sesame Oil for the dressing on this salad and y.'all it's insanely delicious! (Hubby and toddler approved it also!) If you haven't used toasted sesame oil before, you will find that it is has a deeper flavor and it made from slow roasting sesame seeds at a higher temperature than a regular sesame oil would be giving it a rich nutty flavor.

My favorite use of the toasted sesame oil is in dips and dressings because of it's strong flavor that adds so much to any dish! That's really what makes this salad stand out, it's the delicious dressing made from high quality sesame oil!
Ingredients:
1 Lb. Medium Sized Wild Caught Shrimp, deveined and peeled
1 package rice noodles
1/2 Cup Julienned or Grated Carrots
1 English Cucumber Sliced Thinly
1 Jalepeno Sliced Thinly
1/4 Cup Fresh Cilantro
1/4 Fresh Mint
Ecotierra® Organic Toasted Sesame Oil
1/2 Cup Low Sodium Soy Sauce
2 Tbsp. Rice Wine Vinegar
2 Tbsp. Fresh Ginger
2 Tsp. Sugar
1 Tsp. Chili Paste
Directions:
Make vinaigrette by combining soy sauce, rice wine vinegar, ginger, sugar, and chili paste and whisking to combine.
Bring 6 Cups of water to a boil and then add 2 tbsp. of soy sauce.
Add shrimp to the boiling water and cook for 2-3 minutes until the just turn pink and then remove from the liquid.
Using that same liquid, bring back to a boil and place noodles in the water and boil for 2-3 minutes until just tender. Drain, rinse with cool water.
Drizzle 2 tablespoons of the vinaigrette over the noodles and toss to coat.
Layer carrots, cucumbers, shrimp, jalepeno, cilantro, and mint on top of noodles and toss to combine.
Drizzle more vinaigrette over top as desired and serve immediately or store in the fridge for up to 2 days.
