Thai Ground Beef Salad

This recipe for Thai Ground Beef Salad is full of flavor, easy to prep, and will quickly become one of your favorite salad recipes!

This Thai Ground Beef Salad is perfect for meal prepping because you can cook up the ground beef, slice all the veggies, make the dressing, and then simply assemble when ready to serve any night of the week all in under 30 minutes! I love the crunchy veggies with the spicy sweet dressing, the delicious ground beef and fresh herbs. The combo of all of the ingredients is truly delicious.
You can adjust your spiciness in this dish if desired by adding more or less chiles to the recipe, but I do think a little bit of heat is key here! You could also add some lettuce or other veggies that you have hanging out in the fridge, but cucumber and tomato with a little bit of shallot is the traditional salad inspiration here. The dressing is simply made up of lime juice, fish sauce, garlic, chiles, and a little bit of salt and sugar and really brings this whole salad together.

Ingredients:
2 Lbs. Laura Lean 96% Lean Ground Beef
2 English Cucumbers
1 Cup Cherry Tomatoes
1 Shallot or 1/4 Cup Red Onion
2 Jalapeños or Thai Chiles
3 Garlic Cloves
1/4 Cup Cilantro (Leaves and Stems) + extra
2 Tbsp. Fresh Mint
1 Tbsp. Fish Sauce
2 Tbsp. Avocado Oil (or other flavorless oil)
1/4 Cup Lime Juice
1 Tsp. Sugar
1 Tsp. Salt
1/2 Tsp. Black Pepper
Directions:
Add 1 Tbsp. Avocado Oil to a large skillet and brown ground beef with salt and pepper.
While meat is browning, slice cucumbers, tomatoes, and shallot.
Make dressing by combining jalapeños, garlic cloves, cilantro, fish sauce, lime juice, sugar, and the remaining oil into a food processor and pulse until well combined.
Layer cucumbers, tomatoes, shallots, extra cilantro, and mint leaves in the bottom of bowl and toss with Thai dressing.
Add desired amount of ground beef on top with extra dressing and serve immediately.
Notes: If not serving immediately, keep dressing on the side until ready to serve. If meal prepping, simply chop all veggies, cook ground meat, and make dressing and keep all separate until ready to serve.
