The Best Seven Layer Salad
Have you ever had a seven layer salad before? Growing up, it was always the salad my mom made for holidays or special occasions and as an adult, it has become a salad that I also make throughout the year when I need a salad to impress! The recipe couldn’t be any easier, and it turns out to be a beautiful salad that is layered with texture and flavor so that each bite is more delicious than the last. I have added my own twist to the classic recipe and I might be biased, but I think it really is the best! I am going to show you just how easy it is to make the best seven layer salad, and it’s perfect for any upcoming Mother’s Day celebrations and more.
What I love about this recipe is that you can customize your layers based on what you prefer for vegetables etc. Honestly, you can make it a ten layer salad if you want (and I usually do), there really are not any rules here other than it’s a layered salad with peas and it gets topped with a creamy dressing. Traditionally, the dressing is a simple mix of mayo and sugar, but I took that classic combo and put my own spin on it and it is so so good. I cut the mayo with some Greek yogurt and added fresh dill and lots of cracked pepper which truly makes this salad extra special. To me, anytime you add in fresh herbs you are elevating a recipe and fresh dill happens to be one of my favorite herbs. This dressing is so good in fact, that I have started making it to use on regular salads too. It is kind of like ranch’s lighter and fresher cousin. (The cousin that you definitely want to bring to the party!) Anytime I make this salad and bring it to a gathering, people always want the recipe and I know you are going to love it too.
My seven layer salad is layered with texture and is irresistible with smoky bacon, cheese and the ultimate seven layer salad dressing! I can’t wait for you to try this one out the next time you need a show stopping salad that no one will be able to call boring!
Ingredients:
1/2 Head of Iceberg Lettuce, chopped
2 Cups Baby Spinach, roughly chopped
1 Cup Grape Tomatoes, sliced in half
1 Cup Diced Cucumber
6 Boiled Eggs, diced or sliced
6 Sliced Green Onions (reserve 1 tablespoon for garnish)
8 Pieces Cooked Bacon, chopped roughly
1 Cup Shredded Cheddar Cheese (optional)
1 Cup Frozen Peas, defrosted
1 Cup Greek Yogurt
1/2 Cup Mayonnaise
1 Teaspoon Granulated Sugar
1 Teaspoon Kosher Salt
1 Teaspoon Cracked Black Pepper
1 Tablespoon Fresh Dill
Note: Feel free to add cucumber, red bell pepper, or any other veggies that you want to add into the mix. Also, if you don’t like fresh dill, you could use basil or just omit it totally, but I highly recommend giving it a try!
Directions:
Make the dressing by combining Greek Yogurt, mayonnaise, sugar, salt, pepper, and fresh dill. Whisk to combine and chill until ready to assemble salad.
Layer iceberg lettuce and spinach in the bottom of a large glass bowl.
Next layer tomatoes, cucumbers, eggs, green onions, and peas in single layers on top of the lettuces.
Take the yogurt dill dressing and spread an even layer on top of the peas.
Finally sprinkle cheddar cheese and bacon on top of the dressing and garnish with extra dill and green onions.
Refrigerate for up to the night before or serve immediately.
