Vanilla Cantaloupe Popsicles

Popsicles and summertime are the perfect pair. I cannot remember a summertime memory that didn’t include lots of popsicles growing up. Warm summer days where we played outside all day and then came home to an ice cold popsicle with a few extra tan lines was just the best. We definitely did not grow up with homemade popsicles however, but did have a freezer stocked with the push up kind that come in plastic and about 100 to a pack (and I bet you did too!) And while I still to this day love those pops, I love making homemade popsicles as well. You wouldn’t believe how easy it is to make your own popsicles and honestly you can make them whatever flavor and ingredients that you prefer and have on hand. This recipe for vanilla cantaloupe popsicles has quickly become a new favorite around our house and couldn’t be any easier to make.

Cantaloupe popsicles might sound odd, but one day when I cut into an overly ripe cantaloupe and realized it was too ripe to eat, I blended it up with a few ingredients and these popsicles were born. It was one of those happy recipe accidents that you end up making over and over again. If you love a creamsicle pop, then I can guarantee you will love these vanilla cantaloupe popsicles too. Even though they don’t have a cream center, the flavors definitely give you the same taste and are healthy enough that you can get away with a popsicle for breakfast!

This is one of the reasons that I love making homemade popsicles because I have a kiddo who is a popsicle monster and when I make them with good for you ingredients, I don’t have to feel bad about him eating multiple popsicles a day! He thinks he is getting a treat and I know he is eating something that is actually good for him…hello mom win!

These pops are made with cantaloupe, vanilla, honey, and a bit of milk to give it just enough fat for a really good texture. You could also use full fat coconut milk here if you wanted to and although it would give it a slight coconut flavor, it would no doubt be just as delicious. I just love the color of these popsicles and the flavor really is so simple, yet so delicious.

Your whole family will love this new way of enjoying cantaloupe for the rest of the season!

Ingredients:

  • 1 Cantaloupe, seeded, peeled, and cut up

  • 1 Tsp. Vanilla

  • 2 Tbsp. Whole Milk or Cream

  • 2 Tbsp. Honey or Maple Syrup

Directions:

  • Add all ingredients to a blender and blend until smooth.

  • Add to a popsicle mold, add popsicle sticks and place in freezer overnight.

  • Serve as you wish.

The next time you grab a cantaloupe at the store, turn it into a fun and healthy dessert or snack that everyone in the family can enjoy!
