Whole Wheat Flax Banana Bread
I tend to purposefully buy too many bananas so that a few of them don’t get eaten and get a little too ripe, leaving me with no choice but to make something delicious with them. I always freeze a few of the over ripe bananas for smoothies and then, I of course always have to bake something with a few of them too. Banana bread is always a favorite around my house and it probably is at your house too. I like to swap a few ingredients from my traditional banana bread recipe to make this whole wheat banana bread just slightly healthier and at the same time make it more nutrient dense. There is just something so comforting about the smell of freshly baked banana bread in the oven that just makes me smile. I love cutting that first piece right out of the oven and slathering a bit of butter right on top. My whole wheat flax banana bread will definitely make you want to over buy bananas every single week, it’s just that delicious!
I swap regular all purpose flour here for a whole wheat flour and use a coconut sugar to make it refined sugar free, as well as adding in some Greek yogurt, flax and chia seeds to amp up the nutrients in this bread. You are going to love that this bread is on the healthier side all the while still satisfying your banana bread cravings. After all, no one wants to eat a banana bread that is too healthy right?
I like to serve a piece of this banana bread warm with and spread a little nut butter on top for extra protein and it’s the perfect make ahead breakfast for the whole week (that is if it lasts that long.) Your kids will love it and you will love knowing that they are not starting their day with empty calories! This is a simple recipe that anyone can bake up and it’s even great to get your kiddos helping you make it in the kitchen.
The recipe is super straight forward and is one of those recipes that makes a fantastic homemade gift or nice pick me up for a friend right now. I like to double this recipe and bake two loaves so I can have one loaf for my family and then drop off another loaf for a friend. But either way you decide to do it, I can promise you won’t regret having a slice of this deliciousness for breakfast or a snack any day of the week.
Ingredients:
2 Eggs
1/3 Cup of Milk
1 Tsp. Apple Cider Vinegar
1/4 Cup of Avocado Oil
1/4 Cup of Greek Yogurt
3 Mashed Ripe Bananas
1 1/2 Tsp. Pure Vanilla Extract
1/2 Cup Coconut Sugar
1 3/4 Cup Whole Wheat Flour
1 Tbsp. Ground Flax Seeds
1 Tbsp. Chia Seeds
1 Tsp. Baking Soda
1/2 Tsp. Kosher Salt
Note: You can also add chocolate chips, nuts etc to this mix if you desire.
Directions:
Preheat oven to 325 degrees.
Grease a 9 x 5 Loaf Pan or Line with Parchment Paper.
Combine milk and vinegar and let side for 5 minutes.
Mash bananas in a large bowl and add eggs, Greek yogurt, vanilla, oil, and milk at this time and whisk until combined.
In another bowl combine flour, sugar, flax, chia, baking soda, and salt.
Slowly incorporate dry ingredients into the wet ingredients until well combined.
At this time if you wanted to add your chocolate chips or nuts you would coat lightly with flour so they don't sink when baking and add them to the batter.
Pour batter into your greased or lined loaf pan and bake for approximately 55-60 minutes depending on your oven until cooked through.
To test if the bread is baked through you can stick a toothpick in the middle and see if it comes out clean. This will mean the bread is done baking.
