Sunday we are heading to Boston and Maine for a a little getaway (baby free y'all)! We are definitely planning to eat all of the yummy things along the way including as many lobster rolls as will fit in my belly. This week however we have been eating extra clean in preparation for our indulgences next week, but that doesn't mean that you can't enjoy a little treat just because I am eating low carb and sugar for the next four days! Life is about balance and my easy homemade peach cobbler is the perfect dessert to make before peaches and summertime disappear right before our eyes!
I have always been a cobbler gal more than a pie gal because there is more "crust" and let's face it I love carbs and I can't even try to act like I don't! Which is why I can only go without them for short periods of time and even then the struggle is real! Growing up my best friend would eat the inside filling of a pie and I would eat the crust (true story), which is why I think we were always destined to become best friends! I mean everyone needs a friend who can be there for you like that don't ya think?
I have a sweet tooth that is a force to be reckoned with most weeks, and even just seeing these pictures of this peach cobbler and telling you all about it is making me wish I had a piece with my coffee this morning! Cobbler for breakfast should totally be a thing.
This cobbler is just sweet enough and because peaches are in season right now, your cobbler is going to be even more amazing! The fluffy topping is everything you want it to be and when you top the whole thing with vanilla ice cream, it's hard to ever imagine a more perfect dessert pairing!
And...did I mention that it is literally the easiest dessert to make which is perfect for my fellow non bakers out there who like to pretend that we in fact are decent bakers! This recipe is for you friend.
Do yourself a favor and make this dessert over the weekend and wow your family and friends with a seriously yummy treat! Or if you want to make it and not tell anyone so you can eat the whole thing yourself, I totally get that too. Either way, just promise me that you will make this cobbler and tell me about it! You are going to love it!
