This week I managed to take my child to school on a day that he didn't in fact have school (I may have almost cried), on top of that Parks has woken up at 5am or somewhere in that time frame every single day leaving me feeling more tired than usual, and it seems like I can't get into my routine this week! Do you ever have weeks like that where you just feel off? (Please tell me I'm not alone here.) Thank goodness for easy recipes that save the day when my brain clearly isn't working so I don't have to put much effort into creating a delicious recipe that the whole family loves. My sumac roasted chickpea Caesar salad is just the kind of meal that nourishes your body, tastes delicious, and is easy peasy too!
Roasted chickpeas are my new favorite snack and salad topper because they get crunchy, salty, and are full of protein! If you haven't tried roasting your chickpeas yet, now is the time to give it a try! Sumac gives the chickpeas an almost lemony brightness which is the perfect addition to this Caesar salad! I add the chickpeas on top of crisp romaine and then add a good dose of healthy fats from the avocado and extra protein from a few boiled eggs! The whole thing gets drizzled with my favorite homemade Caesar dressing and it seriously one of the best salads I have had in a long time full of nourishing ingredients for your body!
You can easily add a piece of roasted salmon to the mix if you want, but this salad is hearty enough on its own I can promise you! Even my hubby and my toddler were very into this one two weeks in a row, so you know that it's a keeper! For Parks' serving, I simply deconstructed his on a divider plate and he gobbled it right up!

Ingredients:
1 Head Romaine Lettuce
1, 28 Oz. Can of Chickpeas (rinsed and drained)
1 Avocado
6 Boiled Eggs (optional but great for extra protein)
1/4 Tsp. Sumac
1/2 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
1 Tbsp. Avocado Oil
1/4 Cup Grated Parmesan Cheese
For the Caesar Dressing-
3 Tbsp. Mayonnaise
1 Tbsp. Dijon Mustard
2 Tbsp. White Vinegar
1 Tsp. Worcestershire Sauce
1/8 Tsp. Anchovy Paste
1 Tbsp. Lemon Juice
1 Clove of Garlic
1/2 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
Note: For a thicker dressing, add more mayo.
Directions:
Preheat oven to 400 degrees.
Toss chickpeas with avocado oil, sumac, salt and pepper and roast for 20-25 minutes until golden brown and just crispy on the outside.
While chickpeas roast, mix together dressing ingredients in a food processor until smooth. You can also whisk by hand but be sure to mince garlic very well beforehand.
Chop romaine lettuce and then top with parmesan cheese, eggs, sliced avocado, and chickpeas and then drizzle Caesar dressing over top.
Serve immediately.
