Happy Monday! I hope you all had a great weekend! It was rainy all weekend here in Texas so we did a lot of cooking and hanging out, which is fine by me because there isn't a whole lot that you can do when the weather doesn't cooperate except make delicious food! And because we spent a lot of time indoors, I spent a little time planning out my Super Bowl menu for this coming weekend also! I want a good balance of healthy versus indulgent dishes and one dish that is 100% going to be making an appearance for the big game is my easy 5-ingredient buffalo cauliflower!
Happy New Year guys! I hope your holiday was fantastic and your new year has started out just the way you had hoped it would! We are finally all feeling better around here and I have health on the brain as one of my top priorities for this year! I am definitely not talking about losing weight here, but more about over all health and taking care of myself better so I can be a better mom, a better wife, and better at my job! One of my favorite ways to incorporate more nutrients into my diet is to sub cauliflower for things like rice and mashed potatoes when I have those carb cravings hitting me hard! TGIF guys! This week had been dragging for me, and I am super excited about the weekend finally arriving. Tomorrow night I get to dress up in a ball gown and Canean will be looking dashing in a tux because we are attending a Mardi Gras Ball! To be honest I'm really excited, we haven't gotten this dressed up since our wedding almost seven years ago! It's our last Mardi Gras here in Louisiana so it will be a great way to go out with a bang. As far as the rest of the weekend goes, I'm planning on doing a little blog planning, house de-cluttering, and eating comfort food like my Roasted Cauliflower and Whole Wheat Pasta with Pork Meatballs.
This recipe is one of my favorites. It's pretty healthy and the cauliflower adds extra volume to the dish and you end up eating less pasta.
