I have been a little pre-occupied with Parks' birthday and family being in town, therefore I have been a little MIA...oops. I feel like the past eighteen days of October have disappeared right before my very eyes. How is it possible that it's almost Halloween? On top of that, two of my burners on the stove went out last week due to a possible wine spillage (possibly from my mom...we won't tell her though) and I have had to be super creative with our meals due to my limited cooktop. Easy side dishes that can be done quickly to make room for the next pot are a requirement these days! Ummmmm, how is it August already guys? The summer is passing entirely too quickly and although I'm ready for the heat to leave, I am not ready for the idea of summertime to go away! I am holding on to all things grilled, fresh, and easy and pretending like we are not officially one and a half months away from Parks turning ONE! Holy moly! That's a whole other subject though, so let's stick to why we are here and that is for the pork! This week started out a little rough, I am not going to lie. Parks had his first tumble and hit his little nose on the coffee table pretty good leaving a little bruise and scrape and basically scared me to death. He was fine after he calmed down, and I on the other hand was shaken for the rest of the afternoon and was sure we needed to go to the doctor. It was a long day , and on days like Monday (or any day really), easy dinners are necessary and there isn't anything more simple than whipping up a fantastic salad. My pear, goat cheese, and pork tenderloin salad is literally on weekly rotation in our house and you are going to love it too!
We have a few weeks left of summer and I am taking full advantage in the kitchen. I'm whipping up light and healthy meals that I can grill up for a fast dinner almost every night of the week right now. With kids back at school and vacations officially over for the year, schedules are getting busier and busier and no one has the time to worry about dinner.
