Two years ago my hubby and I went to Maine and fell in love with haddock sandwiches. They were everything you could want in a fish sandwich and more. These haddock sandwiches were made with simple ingredients letting the fish shine through. They were not greasy at all and yet had a perfectly crisp crust on the outside. The bun was golden, dressed simply with tangy tartar sauce and crisp lettuce and pickles. Is your mouth watering yet? (Because mine is, and it’s only 7 am here.) Needless to say we had a haddock fish sandwich almost every single day on our vacation, even if it meant splitting one because we just couldn’t get enough!
