There's only a month left of summer and there is a little part of me that is panicking. What will I do without my favorite fruits like berries, peaches, melons, and figs? I am just not sure I am ready to give them up. I mean I love apples and grapes, but they don't speak to my soul in the way that summer fruits do. I am however ready for a relief in the heat and all things pumpkin and cozy, but until then you can find me making dishes like my fig and melon salad with prosciutto and savoring the last days of the their season.
Speaking of figs, let's talk about them for a second. I grew up with the assumption that figs were just a part of the fig newton cookie, I never actually saw or took a bite of a fresh fig until I moved to Louisiana. I know, crazy right? It was however love at first bite, and not to mention I think they are one of the prettiest fruits out there. With their variety of colors and beautiful fleshy insides they are absolutely stunning! If you haven't jumped on the fig bandwagon yet, it's okay, you still have a few weeks to get on board!
This salad is perfectly light and summery and makes for a perfect lunch or dinner while the weather is still rather hot. Or maybe where you live you have experienced a touch of fall coming your way, but in Texas we are still having heat indexes of 103 degrees everyday, so I don't want to know about your crisp mornings just yet while I'm over here fighting humidity!
I would also serve this dish if I were entertaining at my house. It is a stunner of a salad and your guests will be blown away by its beauty. The exciting part is, it's as easy as it gets in the recipe department.
Let's eat all the melons and figs that we possibly can before they disappear from us for another six months! And let's start with this salad...
Ingredients:
5 Fresh Figs, cut in half
1/4 of a Fresh Cantaloupe, Sliced
3 Slices of Prosciutto
2 Oz. Goat Cheese
1 Cup of Fresh Mixed Greens
Juice from one Lemon
1 Tbsp. Honey
1 Tbsp. Extra Virgin Olive Oil
Salt and Pepper
Directions:
Arrange your bed of greens, and then layer figs, cantaloupe, and prosciutto on top.
Crumble goat cheese over top.
In a small bowl, combine lemon juice, honey, and olive oil and whisk well.
Drizzle dressing over salad and serve immediately.
You could also add your favorite nut to this salad if you wanted, walnuts would be great! Either way this dish is so fresh and healthy and you are going to love it!
