Happy Monday! How was your Easter weekend? We had family in town and the kids dyed eggs, ate their weight in candy, played in the mud, and just had the best weekend together! Yesterday I am pretty sure that 90% of Parks' diet was sugar and I wasn't far behind him! So now that Easter is over and my excuse to eat candy is no longer valid, I am meal planning for the week and I am all about preparing light meals that the whole family will love while keeping me on track! My sloppy joe stuffed peppers are just the kind of meal that is super satisfying while being low carb and healthy at the same time!
I originally created this recipe for eHow and have loved it so much that I knew I needed to share it with you guys on here also! There is nothing like a good sloppy joe...you know the real thing that is sandwiched between a perfect bun and is messy and delicious...but I have to say that these stuffed peppers really give you the same craving fix without the heaviness of a bun!
