If you are looking for new ways to enjoy fish, then I have a delicious recipe for you today. On top of being simple to make, it is nutritious and so full of flavor too. I love using cod for recipes likes this that are loaded with flavor because cod can take on whatever flavor profiles you are in the mood for. I have been in a Mediterranean phase lately in the kitchen and decided to bake up some cod with those exact flavors. This recipe for baked fish with Mediterranean olive salsa is the perfect weeknight dinner that can be served on its own or with a side of roasted potatoes.
If you are an olive lover like myself, then you are going to flip over this Mediterranean Olive Salsa. Not only is it great on this fish recipe, but it would also be amazing served as an appetizer with some pita chips or cucumber slices. Its a combination of olives, red onion, feta cheese, spices, vinegar, and olive oil and it is so delicious. Itβs the perfect flavor bomb to go on top of the fish and the combination of the flakey fish with the tangy olive salsa is just a match made in heaven.
For the fish, you could easily swap the cod for halibut or another white fish if that is what you have on hand. I personally love cod because where I am in Texas its a little more affordable and has a super mild flavor letting the salsa shine here. I also usually serve this recipe with my Greek rice or roasted potatoes to complete the meal, but you could also serve it with a side salad if you prefer. Either way, you are going to want to save this recipe to make over and over again.
Ingredients:
2 Lb. Cod or other white fish
1 Tbsp. Mediterranean Spice Blend (see recipe below)
1 Tsp. Salt
1/2 Tsp. Black Pepper
1 Tbsp. Extra Virgin Olive Oil
Fresh Lemon Wedges for finishing
For the Mediterranean Spice Blend-
1/4 Tsp. Dried Oregano
1/4 Tsp. Dried Thyme
1/4 Tsp. Dried Dill
1/4 Tsp. Dried Basil
1/4 Tsp. Red Pepper Flake
1/4 Tsp. Garlic Powder
1/4 Tsp. Onion Powder
For the Olive Salsa-
1/2 Cup Pitted Castelvetrano Olives, roughly chopped
1/2 Cup Pitted Kalamata Olives, roughly chopped
1/4 Cup Diced Red Onion
2 Tbsp. Chopped Fresh Parsley
2 Tbsp. Chopped Fresh Dill
1/4 Cup Crumbled Feta Cheese (can add more if you are a feta lover)
3 Tbsp. Red Wine Vinegar
2 Tbsp. Extra Virgin Olive Oil
1/2 Tsp. Mediterranean Spice Blend
1/4 Tsp. Salt
1/4 Tsp. Black Pepper
Directions:
Preheat oven to 425 degrees.
Make spice blend by combining spices and mixing to combine. Set aside.
Mix 1 tbsp. mixed spice blend, salt, pepper, and 1 tbsp. olive oil in a bowl and make a paste. Rub fish down on all sides and then place onto a parchment lined baking sheet.
Bake for 12-15 minutes until fish has cooked through, switching to broil the last 2 minutes of cooking for a little browning. Squeeze fresh lemon juice over the fish when it comes out of the oven.
While the fish is cooking combine olives, red onion, parsley, dill, feta cheese, red wine vinegar, olive oil, 1/2 tsp. spice blend, 1/4 tsp. salt, and 1/4 tsp. black pepper in a bowl and stir to combine.
When fish is done cooking, top with the olive salsa and garnish with extra herbs. Serve immediately.
Note: This fish pairs nicely with roasted potatoes or over rice.
