Crostinis are the perfect appetizer to bring to any gathering which is why I partnered with my friends at Winter Sweetz to create this delicious broiled grapefruit, crispy prosciutto, and ricotta crostini. The combination of flavors with the creamy ricotta, crispy and salty prosciutto, and caramelized sweet grapefruits is just out of this world. These crostinis are easy to make, so pretty, and the best part is all of your friends and family will rave about them.
Winter Sweetz are some of the sweetest grapefruits you will ever taste because of the way they are grown right here in Texas. They are the most beautiful shade of pink and do not have that bitter taste that some grapefruits can have making them ideal for not only snacking, but to use in sweet or savory recipes as well.
For these crostinis i simply supreme a couple of Winter Sweetz grapefruits and then broil them in the oven to caramelize them slightly, and then toast up some baguette slices, top with creamy ricotta cheese, broiled grapefruit segments, crispy prosciutto, and finish off with a drizzle of honey and a sprinkle of chives. They are as pretty as they are tasty I can promise you that!
Ways to switch up the recipe:
Instead of ricotta cheese, try burrata or cream cheese.
Instead of broiling the grapefruits, simply add them fresh.
Omit the prosciutto for a meat free appetizer option.
Add basil or mint for some herby freshness.
What to prep in advance:
Mix the ricotta mixture in advance and keep in the fridge until ready to assemble.
Bake the prosciutto in advance.

Ingredients:
2-3 Winter Sweetz Texas Red Grapefruits
1 Tsp. Sugar
1 1/2 Cups of Ricotta Cheese
1 Tsp. Kosher or Sea Salt
1 Tsp. Black Pepper
1 Tbsp. Fresh Chopped Chives + extra for garnish
5 Pieces of Prosciutto
1 Baguette sliced on the diagonal into 1 inch thick pieces
2 Tbsp. Olive Oil
Honey for finishing
Directions:
Turn the oven to broil.
Supreme grapefruits by taking a knife and removing the skins of the grapefruit. Next slice in between each grapefruit segment removing each segment and placing onto a baking sheet lined with parchment or a silpat.
Sprinkle a little bit of sugar over top of the grapefruit segments and broil for 5-7 minutes until grapefruits begin to caramelize. Set aside.
Brush the baguette slices with olive oil and sprinkle with 1/2 tsp. salt and 1/2 tsp. black pepper.
Turn the oven to 400 degrees and place bread onto a baking sheet and bake for 10 minutes until just golden.
Place prosciutto slices onto a another baking sheet and bake until crispy about 10 minutes.
Meanwhile mix ricotta cheese, the remaining salt and pepper, and chives in a bowl'.
Place baked baguette slices onto a serving tray and then add about 1 Tbsp. of ricotta cheese mixture and spread over each slice.
Layer 1-2 of the broiled grapefruits on top of the ricotta cheese.
Add a piece of crispy prosciutto next followed by a drizzle of honey.
Add extra chives for garnish and serve immediately.
