I love a good chicken salad and a chicken Waldorf salad happens to be one of my favorites. Whether or not you are scooping it up with some veggies or crackers or making a sandwich out of it, you really can’t go wrong with this delicious chicken Waldorf Salad. My recipe for Chicken Waldorf Salad is easy, delicious, and is the perfect way to lunch any day of the week.
I start off by using a rotisserie chicken, but feel free to poach or roast your chicken first if you prefer. I am all about taking a few shortcuts in the kitchen and a rotisserie chicken is one of my favorite shortcuts. I simply shred the chicken and then add in some good crunchy elements like celery, onion, grapes, and candied pecans. You can of course use regular pecans here and simply toast them up before adding, but I love the extra crunch from the candied pecans myself! I toss it all with a simple and creamy dressing made out of half mayo and half Greek yogurt with some fresh lemon juice and salt and pepper. No need for sugar in the dressing because of those candied pecans already in the recipe which give it that signature salty with a bit of sweet flavor that a Waldorf chicken salad should have.
I love that I can make a big batch of this chicken salad and it will keep in the refrigerator all week long. It’s perfect on bread, croissants, and even as a dip with crackers and veggies. It’s a recipe the whole family will love and it is super easy to whip up at the beginning of any week.

Ingredients:
1 Rotisserie Chicken, meat shredded
2 Stalks Celery, Finely Diced
1 Cup Grapes, diced
1/2 Cup Finely Diced Red Onion
1/2 Cup Candied Pecans, Chopped
1 Tbsp. Fresh Parsley, finely diced
1/2 Cup Mayonnaise
1/2 Cup Greek Yogurt
3 Tbsp. Fresh Lemon Juice
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
Directions:
Add chicken, celery, grapes, onion, pecans, and parsley to a large bowl.
In a small bowl combine mayo, Greek yogurt, lemon juice, salt, and pepper and whisk to combine.
Pour the dressing over the rest of the ingredients and toss to combine.
Chill or serve immediately.
