Thanksgiving side dishes are my favorite. I mean yes, a good turkey or ham is great too, but I’m truly in it for the side dishes. One side dish that always has to make an appearance at the table is classic corn pudding. If you have never tried this delicious and easy side, it’s a must for any holiday table. This recipe for easy corn pudding is going to quickly become one of your family’s most requested dishes every year.
Maybe you grew up eating corn pudding, or maybe this is the first time you are hearing of it. Either way, it’s a recipe I think everyone should have for the holidays. My husband’s must make side dish every year is this one. He did not grow up eating corn pudding and once he tried it, he was hooked. The name is a bit confusing however, because it’s not really a pudding. It’s a mix between a cornbread and a pudding you could say as far as texture goes. It is so easy so it’s great to have in the mix of all of you other side dishes on the day of Thanksgiving because it can be prepared in under five minutes.
This recipe calls for Jiffy cornbread mix, and while some may say I should try and make it from scratch, I just say if it works, why make things more complicated. This is a recipe by mom gave me long ago and she has made it for as long as I can remember. You might have grown up eating it too, and if so then you know how good it truly is!
Cornbread mix, butter, sour cream, corn kernels, and creamed corn is all that it takes to make this easy dish and I promise there probably won’t be any leftovers post Thanksgiving unless you are lucky! I hope you will give this dish a try for yourself if you haven’t ever tried it before!
Ingredients:
2 Boxes Jiffy Cornbread Mix
2 Cans of Corn Kernels, drained
2 Cans of Creamed Corn
8 Oz. Sour Cream
1/2 Cup Melted Butter
1/2 Tsp. Black Pepper
1/2 Tsp. Salt
Chives for topping if desired.
Directions:
Preheat oven to 350 degrees.
Add all ingredients to a large bowl and stir to combine.
Spray a 9 x 13 baking dish with nonstick spray and then add the corn mixture to the pan and spread into an even layer.
Cover and bake for 30 minutes.
Uncover and continue to bake for another 30-40 minutes until corn pudding does not jiggle in the middle and is browned slightly on top.
Sprinkle fresh chives on top and serve.
