Sheet pan meals are genius don’t you think? One pan, little to no mess to clean up, and everything you need for a complete dinner all one one pan! I mean who doesn’t want more of these types of meals in their life? I know I do! I am always looking for new sheet pan dinner combinations that I can create to make easy weeknight dinners. Shrimp is one of those seafoods that I always like to have hanging out in the freezer because it thaws quickly and can be made into a variety of meals! I created a shrimp sheet pan meal that can be made from pantry and freezer staples any night of the week and the whole family will love it guaranteed! My easy Greek shrimp sheet pan meal is healthy, full of flavor, and couldn’t be any easier to prepare.
Do you cook with seafood often? If not, shrimp is a great place to start because they are super easy to prepare. The biggest challenge with shrimp is that most people tend to overcook them. You simply want to cook them until they turn pink and are opaque and cooking time varies based on what method you are using to prepare them. (Baking, Boiling, Grilling, etc.) Shrimp are great to keep stocked in your freezer because you can make so many different meal ideas with them.
What kind of meals you might ask?
Well, funny you mention it, because sheet pan meals are my new favorite weeknight dinner kitchen hack! They are quick, the clean up is super simple and you get your protein, vegetables, and carbs right on the same pan. I also think that sheet pan meals end up being super flavorful because of the fact that everything gets cooked together and the flavors intermingle and do magical things. My easy Greek shrimp sheet pan meal is going to quickly become one of your favorite dinners because not only are the flavors so fresh and delicious, but it’s ridiculously easy to make too!
Here’s a little tip for getting your potatoes to cook at the same time as your shrimp. I like to par boil my potatoes prior to cooking, so that they will get tender at the same time that the shrimp get cooked through. This whole dish takes 15-20 minutes tops, not counting the potatoes cooking prior to roasting, which I know we all can appreciate on busy weekdays. You could also leave out potatoes totally and add zucchini or green beans here for another veggie! Feel free to switch it up as you wish. I also like serving it over rice if I leave potatoes out as well. There are so many options here based upon what you have in your refrigerator so get creative with it!
Once it comes out of the oven, you top with a little feta and a squeeze of fresh lemon and serve this healthy deliciousness right up!
Ingredients:
1 1/2 Lb. Peeled and Deveined Wild Caught Shrimp
1 Cup Grape Tomatoes
4 Oz. Artichoke Hearts
1/4 Cup Kalamata Olives
1 Cup Yukon Gold or Red Potatoes, Sliced into Wedges
1/4 Cup Diced Feta Cheese
1 Tbsp. Fresh Lemon Juice + extra wedges for garnish
1 Tsp. Greek Seasoning (can sub Italian seasoning)
1 Tbsp. Olive Oil
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
4 Cups Cold Water
Directions:
Preheat oven to 425 degrees.
Add potatoes and water to a saucepan and bring to a boil and cook for 10 minutes until they just start to become tender. Careful not to let them get too soft here. Remove from water and let them dry slightly.
Add shrimp, tomatoes, artichokes, olives, and partially cooked potatoes to a parchment paper lined baking sheet.
In a small bowl combine greek seasoning, lemon juice, olive oil, salt, and pepper and whisk to combine combine.
Pour the liquid over the shrimp mixture on the baking sheet and toss to combine and coat thoroughly.
Spread into an even layer.
Bake for 15-20 minutes, switching oven to broil the last 2 minutes of cooking to brown the potatoes and tomatoes.
Top with feta once it comes out of the oven, squeeze fresh lemon over top, and then serve immediately.
Note: Instead of boiling potatoes beforehand, you can also roast separately for 30 minutes. Simply toss with a bit of the marinade prior to baking and then add the potatoes to the shrimp after they are both cooked.
Easy peasy right? This meal is healthy, beautiful, and so simple that I can’t think of a reason that you shouldn’t make it asap!
