Summer might be coming to a close, but that doesn’t mean we have to say goodbye to delicious and refreshing cocktails like the classic mojito! Mojitos originated in Cuba and are made with a few simple ingredients that result in one of the most delicious cocktails that are mildly sweet with the perfect balance of tartness from the lime. These easy mojitos are scaled down for two servings, but can very easily be made into a pitcher size for entertaining.
What is a mojito?
A mojito is a highball drink that originated in Cuba and is made with fresh lime juice, fresh mint, granulated sugar, rum, and club soda. Some people make a simple syrup here, but traditionally the drink is made with granulated sugar to keep it from being too sweet and because the texture of the sugar granules that do not dissolve is part of the drink experience.
Do I need any special tools to make this cocktail at home?
You do not need any special tools for this cocktail necessarily. The only tool you could acquire is a cocktail muddler, but the end of a wooden spoon will also work just fine to muddle the mint, sugar, and lime juice together.
Can I make a pitcher of mojitos with this recipe?
You can definitely turn this recipe into a pitcher. However, I recommend waiting to add the club soda individually to each glass as served to keep the effervescence of the drink. To calculate the recipe for a pitcher size, simply count the number of drinks you want to make and double, triple the recipe etc.
Can I make any variations of this recipe?
You can! Feel free to add in fresh berries, peaches or any other fruit to make a seasonal variation of the mojito.

Ingredients:
20 Mint Leaves
2-3 Juicy Limes
4 Oz. White Rum
Club Soda
2 Tsp. Granulated Sugar (Can add more if desired for sweetness)
Directions:
Add 10 mint leaves to two different glasses.
Add in the juice from 1 lime to each glass. Can add more if it isn’t a juicy one. You want at least 2 Tablespoons.
Add in 1 tsp. of sugar to each glass.
Take a cocktail muddler, or wooden spoon and muddle the mint, lime, and sugar together releasing the mint flavor and mixing in the sugar.
Fill the glasses with ice.
Pour 2 oz rum into each glass and then top off with club soda.
Garnish with extra mint leaves and lime wedges and serve immediately.
