Summertime means lots of grilling is happening at my house for a couple of reasons. Number one, grilling means not having to turn on the oven or the stove on when its scorching outside, and number two, grilling makes clean up a breeze when you don’t have dishes to wash after the meal is done. Need I say more? I partnered with Tony Chachere’s to bring you a super simple, but out of this world tasty recipe that you are going to want to make all season long. Grilled sausages get sandwiched between a perfectly grilled bun and topped with a Cajun corn salsa to create the ultimate summer grilled sausage dog. I can guarantee that this recipe for grilled sausage dogs with Cajun corn salsa is going to make you do a happy dance with every single bite.
Tell me I am not the only one who does a little happy dance when a meal is extra yummy? Even my four year old does a little jig when he is eating something that he loves. These grilled sausage dogs with Cajun corn salsa are one of those dishes that will make you move at the table as you savor the deliciousness that comes with every single bite. The combination of the grilled andouille sausage with a toasted bun and crisp spicy Cajun corn salsa is truly a match made in heaven.
I make a corn salsa with freshly grilled summer corn for a little smoky char, spicy pickled okra (which may sound odd, but trust me it’s amazing), tomatoes, green onions, parsley, citrus, and my favorite Tony Chachere’s Original Creole Seasoning for a little kick. This salsa can be made the day before and actually gets even better after sitting in the refrigerator for a few days. Honestly you could eat the salsa as a side dish or as a dip with some chips. It is seriously so good and the best part is, it’s easy to whip up!
This dish would be so great for any backyard BBQ and is a great way to enjoy a delicious meal that is super easy to grill up any night of the week. I mean, who doesn’t love a good sausage dog? You could easily swap out a different sausage if you preferred, but I love the andouille sausage for the spice that it gives to the bun and it pairs perfectly with the Cajun corn salsa. This is a dish that is sure to please all of your friends and family and you will find yourself wanting to make it over and over again.
Ingredients:
4 Links Andouille Sausage
Hot Dog Buns
6 Ears of Fresh Corn on the Cob
1 Bell Pepper, diced
1/4 Cup Diced Tomatoes
1/2 Chopped Green Onions
2 Tbsp. Chopped Parsley
1 Tbsp. Lemon Juice
1 Tbsp. Melted Butter + 1 Tsp.
1/2 Cup Chopped Spicy Pickled Okra (optional)
2 Tbsp. Tony Chachere’s Original Creole Seasoning
Creole Mustard for serving
Directions:
Preheat grill to medium-high heat.
Add sausages and cook on both sides for 4-5 minutes per side until cooked through.
Grill Corn on all sides until slightly charred. Remove from heat and cut kernels off of cob
Make Cajun corn salsa, by combining corn kernels, bell pepper, tomatoes, green onions, parsley, lemon juice, 1 Tbsp. butter, pickled okra (optional) and Tony Chachere’s Original Creole Seasoning in a bowl and stir to combine. Set aside.
Brush the remaining melted butter on the buns and toast or grill slightly.
To serve, spread Creole mustard in bottom of the bun and then place andouille sausage on top of the mustard. Place a few good heaping spoonfuls of the Cajun corn salsa over top and sprinkle with more parsley and green onions.
Serve immediately.
