Lean ground beef gets cooked in a delicious Korean inspired sauce and served over top of fresh vegetables, and rice come to create a delicious and nourishing meal that the whole family will love. This recipe is not only delicious, but it comes together in under 20 minutes from start to finish (unless your rice takes longer) and that is something worth celebrating. One thing that I love about this recipe is while the whole process from start to finish can be cooked in about 20 minutes and you can also meal prep these ingredients and make dinner even speedier. Cook the beef, chop the veggies, and cook the rice in advance and then all you have to do is reheat and serve any busy weeknight. It really doesnβt get any easier than that and you probably always have most of the ingredients on hand.
Substitutions to try:
Instead of ground beef, use thinly sliced sirloin.
Instead of ground beef, use ground pork or turkey.
Add any fresh veggies that you have on hand.
Use cauliflower rice, noodles, or any other grain that you prefer instead of jasmine rice.
Turn the bowls into lettuce wraps and omit the rice totally.
Storage and Reheating Tips:
Keep beef in an airtight container in the fridge for up to 5 days and then simply reheat in a skillet or microwave. I prefer the skillet personally.
Prep veggies and keep in airtight containers or zipper bags in the fridge and simply add to bowls as needed.
Cook rice and store in an airtight container. To reheat add to a microwave safe bowl and place a damp paper towel over top until warm and fluffy. The damp towel helps to add a bit of moisture back into the rice.

Ingredients:
1 Lb. Ground Beef
1/4 Cup Soy Sauce
1 Tbsp. Gochujang
1 Tbsp. Grated Ginger
2 Finely Minced Cloves of Garlic
1 Tsp. Sesame Oil
1 Tbsp. Brown Sugar
1 Tbsp. Avocado Oil
1 Tsp. Salt
For the Bowl-
Cooked Jasmine Rice
Kimchi
Sliced Cucumbers
Thinly Sliced or Grated Carrots
Thinly Sliced Romaine Lettuce
Green Onions
Fried Eggs (optional but recommended)
Directions:
Make the sauce by combining soy sauce, gochujang, ginger, garlic, sesame oil, and brown sugar and stir to combine.
Heat a large skillet over medium heat, add avocado oil, and ground beef and then season with salt and begin to brown. Cook for 5-6 minutes and let the beef continue to cook.
When beef is beginning to brown nicely, add in sauce to the meat and stir to coat and continue cooking until beef caramelizes and finishes cooking.
To assemble add rice to a bowl, then layer desired amount of beef on top along with the kimchi, cucumbers, carrots, lettuce, and green onions. Add fried egg if desired.
Serve immediately.
