The holidays are right around the corner and maybe I’m overly excited, but I am already thinking about what is going to be on the menu. This year more families and friends are gathering to celebrate Friendsgiving and Thanksgiving and I couldn’t be more excited about it. I partnered with Zwilling to create a delicious Thanksgiving side dish idea that your friends and family will love. Mini carrot souffles with a pecan topping is surely to become a new holiday recipe favorite that everyone can enjoy.
Have you ever tried a carrot souffle? It happens to be one of my husband’s favorites and I took it up a notch by adding a delicious crunchy pecan topping that pairs perfectly with the light and fluffy souffle. I love the idea of making mini versions of a carrot souffle for a fun presentation and also so everyone gets all of those delicious baked edges of the souffle and topping. I used my favorite mini Staub cocottes for this recipe and they couldn’t be any cuter.
Not only are these mini cocottes great for baking but you can also store them in the fridge, they are microwave safe, dishwasher safe, and have a beautiful porcelain-enamel finish. They also are great for storing salt and pepper on your counter! As you can see they are super versatile and a great item to have in the kitchen, especially during the holidays!
I love how easy this recipe is. I simply add steamed carrots to my Zwilling Enfinigy Power Blender along with the other ingredients and blend it up until smooth. From there I pour into my Staub mini cocottes and top off with that delicious pecan topping and pop them into the oven until the souffle has set and the topping is nice and brown and bubbly. You could also use a larger baking dish here if you wanted to make a larger version of this souffle no problem. I love using my Staub Baking dish here as well, because it’s not only beautiful but super efficient for baking. It distributes heat evenly and retains moisture creating a perfectly baked carrot souffle every time.
Whether or not you decide to bake a larger version or the minis, one thing is for sure, you are going to love this carrot souffle and your friends and family will be asking for the recipe!
Ingredients:
2 Lbs. Carrots, peeled
1/2 Cup Milk
2 Tsp. Vanilla Extract
3/4 Cup Granulated Sugar
1 1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 Cup Melted Butter
4 Eggs
1 1/2 Tsp. Cinnamon
1/2 Tsp. All Spice
1/4 Cup All Purpose Flour
For Topping-
1/2 Cup Chopped Pecans
1/4 Cup All Purpose Flour
1/2 Cup Brown Sugar
2 1/2 Tbsp. Melted Butter
Pinch of Salt
Directions:
Preheat oven to 375 degrees.
Add carrots to a pot of water that just covers them and boil for 15-20 minutes until carrots are tender. Drain
Add carrots, milk, butter, sugar, vanilla, baking powder, flour, cinnamon, all spice, and salt to the Zwilling Enfinigy Power Blender and blend for 30 seconds.
Crack eggs into a bowl and spoon a couple of tablespoons of the warm carrot mixture into the eggs temper them and prevent scrambling.
Slowly add eggs into the carrot mixture and continue blending for 1-2 minutes until completely smooth.
Make pecan topping by combing pecans, flour, brown sugar, butter, and salt in a bowl and mixing until the consistency is like wet sand.
Spray Staub Mini Cocottes with nonstick spray and then pour the batter into each one filling about 3/4 full.
Top off with a generous sprinkling of the pecan topping and bake for 35-40 minutes until the middle of souffle is not jiggly and the pecan topping is nice and brown and bubbly. (Alternatively bake in a larger baking dish for 50-60 minutes.)
Serve immediately.
Note: The souffle will deflate once it sits for a minute or two out of the oven, and that is completely normal.
