Hey hey Monday! I see you, trying to intimidate us all, making us wish it was still the weekend..but that’s not going to work this week! I’m ready for you. I woke up motivated, rested, and ready to tackle this week’s to-do list! How about you? Not so much? Don’t worry if you aren’t feeling quite as enthusiastic about Monday morning just yet, I am here to change your outlook! One of the ways I prepare for a successful week is by meal planning and lunches are the one thing that sometimes get the short end of the stick! I have had several requests for not only kid friendly lunches, but also adult lunches, and I have a great one that you can prep in advance for the week! My roasted chickpea caesar wraps are so easy to make, healthy, and satisfying to keep you going through any day of the week!
Lunch is one of those things that if I don’t eat something that is nutritious and satisfying, I will either crash and burn around three o’clock or I will end up snacking on unhealthy options at some point in the day! That’s why when I prioritize a lunch that is tasty and healthy I usually have a much better day!
Food is fuel!
My roasted chickpea Caesar Wraps are full of protein, taste amazing, and the best part is you can prep all of the ingredients at the beginning of the week! And this recipe is super cost effective too!
If you love Caesar salads like I do, then you are going to love this wrap version that is based off of my Sumac Roasted Chickpea Caesar Salad! This wrap can definitely be a hit for older kiddos too, or you can serve it deconstructed for your younger kids, so it’s a great recipe to have on hand for the whole family!

Ingredients:
2 Cups Chopped Romaine Lettuce
4 Burrito Size Tortillas
2, 15 oz Can of Chickpeas
1 Tbsp. Olive Oil
1/2 Tsp. Sumac
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
4 Boiled Eggs
2 Tomatoes, Sliced
Directions:
Make Caesar dressing and set aside.
Preheat oven to 400 degrees.
Drain chickpeas and dry on a paper towel to remove excess moisture.
Mix chickpeas, oil, sumac, salt, and pepper in a bowl and then pour onto a parchment lined baking sheet and bake for 15-20 minutes until slightly crispy. Let cool.
Heat a Tortilla slightly in a skillet to make pliable.
Layer romaine lettuce, tomatoes, 1 egg, and chickpeas in the middle of the tortilla.
Drizzle Caesar dressing over top and then roll tortilla up into a wrap and secure with a toothpick.
NOTE: If making in advance, simply leave the dressing on the side to prevent the tortilla from getting soggy.
