This weeknight dinner idea is simple enough to make on even the busiest night of the week, but could easily be served for entertaining as well. Pork chops, apples, onion, and a delicious sauce come together in one skillet to create a delicious meal that the whole family can enjoy. This recipe for skillet pork chop with apples is going to quickly become a weeknight dinner favorite.
Pork chops are a dinnertime staple at our house. I love their versatility and flavor and they are just perfect paired with the apples in this skillet meal. I like to use bone-in chops for this recipe because the bone adds a ton of flavor and I find that the pork chops are more tender when the bone is left in. I also love using honey crisp apples here because I love the tart, yet sweet flavors that the apples have. You could definitely swap out a granny smith or a pink lady apple here as well if you prefer. The apples and pork chops combined with fresh thyme and onion come together beautifully in a delicious apple cider vinegar dijon sauce. Your house is going to smell amazing!

Ingredients:
4 Bone-In 1” Thick Pork Chops
1 Red Onion
2 Honey Crisp Apples
1/2 Cup Chicken Stock
2 Tbsp. Dijon Mustard
2 Tbsp. Apple Cider Vinegar
2 Tbsp. Olive Oil
2 Tsp. Salt
1 Tsp. Pepper
6 Sprigs of Fresh Thyme
Directions:
Heat a large Staub skillet over medium high heat and add 1 tbsp. Of olive oil.
Season the pork chops on both sides with 1 tsp salt and 1/2 tsp black pepper.
Add the seasoned pork chops to the skillet and sear on each side for 5 minutes per side until they brown nicely. Remove from the skillet.
Add another tbsp. of olive oil to the pan along with apple cider vinegar, and chicken stock to deglaze the pan and scrape up any bits from the bottom of the pan with a wooden spoon.
Whisk in dijon mustard until well combined and then add in thyme and stir.
At this time add in onions, apples, and the rest of the salt and pepper and stir to coat in the sauce and continue to cook for 2-3 minutes until apples and onions just begin to soften.
Nestle pork chops in the sauce and cover with aluminum foil or the skillet lid and continue to cook for another 5 minutes until pork chops are cooked through.
Serve pork chops immediately with plenty of sauce.
