I have a few go-to cooking oils that I like to have on hand at all times. Ingredients:
2 Lbs. Boneless, Skinless Chicken Thighs (or chicken breasts)
2 Tbsp. Corn Starch
1 Tsp. Salt
1/2 Tsp. Black Pepper
1 Tbsp. Ecotierra Organic Extra Virgin Sesame Oil
1/4 Cup Chopped Green Onions
Jasmine Rice
For the Sauce-
1/4 Cup Soy Sauce
3 Tbsp. Fresh Ginger
1 Tsp. Spicy Chili Paste
5 Cloves Minced Garlic
1 Tsp. Rice Wine Vinegar
1 Tbsp. Brown Sugar or Coconut Sugar
2 Tbsp. Ecotierra Organic Extra Virgin Sesame Oil
1 Tsp. Toasted Sesame Seeds
Directions:
Cut up chicken into bite size pieces.
Combine corn starch, salt, and pepper and then toss with chicken to coat lightly.
Heat 1 tablespoon of Ecotierra sesame oil in a large wok over medium high heat.
Add chicken and brown on each side for 5-6 minutes.
While chicken is cooking, make sauce by combining soy sauce, ginger, garlic, rice wine vinegar, sugar, and 2 tbsp. Ecotierra organic sesame oil and whisk to combine.
Add the sauce to the chicken and stir to coat thoroughly.
Reduce heat to a simmer and let the sauce thicken and chicken continue to cook for another 15-20 minutes.
Serve over jasmine rice and top with sesame seeds and green onions.
