The summer is almost over, but that doesn’t mean that we still can’t enjoy all of the gorgeous summer fruits for a little while longer! I don’t know about you, but even though I long for crisp fall mornings, saying goodbye to all of my favorite melons, tomatoes, stone fruits, and cherries is not something I am ready for yet! One of my favorite ways to enjoy summer’s produce is to make a Caprese salad! It’s the most perfect summer dish that is so great for a light lunch or dinner all season long! Usually summertime is my favorite time of year. The produce, the tans, the dewy glow on your skin, the list goes on. This summer however, the heat is out of control. Is it always this hot and I have forgotten? Or is this global warming? Anyway you look at it though it's too hot to be outside unless you are going to be sitting in a pool with a cocktail in hand. And when it's this hot out, turning the oven on is unthinkable and meals are meant to be light and fresh!
