The summer is almost over, but that doesn’t mean that we still can’t enjoy all of the gorgeous summer fruits for a little while longer! I don’t know about you, but even though I long for crisp fall mornings, saying goodbye to all of my favorite melons, tomatoes, stone fruits, and cherries is not something I am ready for yet! One of my favorite ways to enjoy summer’s produce is to make a Caprese salad! It’s the most perfect summer dish that is so great for a light lunch or dinner all season long! I turned one of my favorite salads into the best summer entertaining platter! My Ultimate Summer Caprese Platter is perfect to serve up for any remaining warm summer nights spent with friends and family!

If you are always looking for a fun appetizer that doesn’t require you to even turn your oven on, look no further! My Caprese platter is the perfect solution to make your life easier the next time you have guests over!
Not planning on a party any time soon? I love making this platter on a smaller scale for an easy weeknight dinner with some grilled chicken or fish! It also makes for a yummy light lunch for any day of the week! Simply prepare any of your favorite summer fruits, I think melons and stone fruits work best here with tomatoes, and arrange onto a large platter. Mix in tomatoes, lots of fresh basil, fresh mozzarella, serve some balsamic reduction on the side, and a sprinkle with a little flaky salt and that’s it!
I mean is this really even a recipe? I dunno…but it was too delicious not to share with you!
You can use marinated mozzarella balls here, burrata, or just plain fresh mozzarella, it’s all going to be delicious I can assure you! You can also add in some prosciutto or salami slices if you want to add a little meat! I like to serve this with a nice baguette sometimes too. Feel free to mix and match based upon what you have available to you and what you like most!

Ingredients:
1 Cantaloupe
1 Honeydew Melon
1 Cup Tomatoes of any variety
1 Cup Cherries
1 Cup Sliced Peaches
1 Cup Slices Plums
1 Cup Fresh Basil
1/4 Cup Balsamic Reduction (store bought or homemade)
Flaky Salt (sea salt or Maldon salt)
Fresh Mozzarella Cheese or Burrata
Note: Can sub any of your favorite summer fruits here.
Directions:
Arrange fruit and tomatoes on a platter, sprinkle the melons with a little salt.
Add mozzarella cheese and basil leaves.
Serve balsamic reduction on the side.
