We successfully made it through week one of the meal plan and I am starting to feel like myself again! Slowly but surely I am starting to get my groove back in the kitchen and I hope you are too! I absolutely loved getting messages from y’all last week about how you were loving week one of the meal plan and I think you are going to love this week just as much! I am a firm believer in the fact that you don’t have to give up your favorite foods or eat just salads when eating healthy! Instead I believe in eating real foods that are homemade with no yucky ingredients that will leave you feeling satisfied and happy! Sound good to you?
We love going meat free at least once or twice a week! It’s a great way to do something good for your health and usually meatless meals are super cost effective too! We have a few recipes on rotation from week to week, but one of our favorite time and time again happens to be an Indian dish called Chana Masala. This is a quick and healthy meal that your whole family can enjoy any night of the week! My easy 30-minute chana masala can be whipped up on even the most exhausting of days no problem!
Happy Monday! How was your Easter weekend? We had family in town and the kids dyed eggs, ate their weight in candy, played in the mud, and just had the best weekend together! Yesterday I am pretty sure that 90% of Parks' diet was sugar and I wasn't far behind him! So now that Easter is over and my excuse to eat candy is no longer valid, I am meal planning for the week and I am all about preparing light meals that the whole family will love while keeping me on track! My sloppy joe stuffed peppers are just the kind of meal that is super satisfying while being low carb and healthy at the same time!
So yesterday Parks started preschool y'all...I mean it's only two days a week, but it was still a huge day for him (and me) if I am being honest! I was full of mixed emotions as I dropped him off for his first day and you know what, he did great! The day ended up flying by for me and it was one of those days where dinner needed to be simple and fast! My easy chicken and veggie sheet pan dinner came to the rescue and is a regular around our house for just that reason!
Well it happened, the weekend came and went in a flash just like it always does. Our weekend consisted of getting a new washing machine because last week the transmission in our old one went out, which come to find out repairing it would have been more than the new one we bought. Oh the joys of adulting right? On a positive note, I made some serious ground on the cookbook I am currently writing, Baby's First Eats! I still have a list a mile long every day until my deadline, but I'm are making some serious progress people. Since I am cooking all day everyday right now, easy dinners (that are healthy too) are a must! My healthy red Thai curry lentils are the perfect weeknight dinner for hectic weeks like the ones I have in my future!
