I love Vietnamese food. Lately I can’t stop making dishes with an Asian flare and meatballs happen to be the perfect vessel to infuse with those delicious flavors! One of our favorite Vietnamese dishes is a Bahn Mi Sandwich. It can be made with several different proteins, but I happen to love a pork Bahn Mi the best, especially when topped with quick pickled veggies, spicy jalapeño, and cilantro! It’s a sandwich loaded with flavor and my family can’t get enough of it! I have even made Bahn Mi Tacos in my slow cooker that are so perfect for any weeknight dinner! My new favorite twist on the traditional sandwich, is my Bahn Mi Meatball Sandwich that is perfect for meal prepping and dinners that the whole family will love!
I have a love hate relationship with the time change. On one hand I love more evening light, but on the other hand it takes me a week or two to adjust to not feeling behind from the time I get up in the morning! All week i have been feeling like I just can’t get ahead of my schedule and I already know easy recipes are a must this week in order to survive! Fritters are one of those recipes that I love making because you can combine whatever you have in the fridge and make something super yummy that can stand on it’s own or be served alongside your favorite dish.
