I have a love hate relationship with the time change. On one hand I love more evening light, but on the other hand it takes me a week or two to adjust to not feeling behind from the time I get up in the morning! All week i have been feeling like I just can’t get ahead of my schedule and I already know easy recipes are a must this week in order to survive! Fritters are one of those recipes that I love making because you can combine whatever you have in the fridge and make something super yummy that can stand on it’s own or be served alongside your favorite dish. My easy gluten free broccoli cheese fritters with za’atar yogurt dip are perfect to make any night of the week!
Even hard core veggie lovers need to switch up the same old recipes from time to time! These fritters are a great way to give broccoli new life and to even get the pickiest of eaters on board with eating their broccoli! With a few simple ingredients and under 15 minutes, you can have these perfectly crisp and cheesy broccoli fritters ready to eat even on those nights that you have been feeling behind the whole day!
I made these fritters with all purpose gluten free flour, but you can swap for a regular all purpose or whole wheat flour and they will be equally as delicious! They are super easy to customize based on dietary preferences or based upon what you have in you fridge and pantry! I love adding fresh herbs like dill for some brightness, and serving them alongside a tangy lemon and za’atar yogurt dip!
These fritters make great additions to lunch boxes too and are the perfect way to get your picky eaters to enjoy their vegetables! (And they freeze great too!)
Broccoli cheese fritters make a great side dish alongside any protein, but can also be served with a green salad or topped with a fried egg! Any way you eat them, I can promise you are going to love how easy and tasty they are!

Ingredients:
2 Cups of Broccoli
1/4 Cup All Purpose Gluten Free Flour
2 Eggs, lightly beaten
1/3 Cup Parmesan or White Cheddar Cheese
1 Finely Minced Garlic Clove
1 Tbsp. Fresh Dill
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
2 Tbsp. Milk (can sub a non-dairy milk)
2 Tbsp. Olive Oil
1 Tbsp. Butter
For the yogurt dip:
1/2 Cup Greek Yogurt or Sour Cream
2 Tbsp. Lemon Juice
1/4 Tsp. Kosher Salt
1/4 Tsp. Black Pepper
1/2 Tsp. Za’atar Seasoning
Directions:
Steam broccoli by filling up a pan with 2 inches of water and placing broccoli (stems removed) and bring to a boil. Place lid on and steam for 5 minutes and then strain and let cool slightly.
In a large bowl combine flour, eggs, cheese, garlic, salt, pepper, and milk and whisk until combined.
Finely chop steamed broccoli and fold into the batter until combined.
Heat a large skillet over medium high heat and add oil and butter until butter is melted.
Take 1/4 cup of broccoli fritter batter onto the pan and cook for 4-5 minutes on the first side and then flip to continue cooking for 2-3 minutes more on the other side until golden brown and cooked through.
Place onto a paper towel lined baking sheet to get rid of excess oil and sprinkle with a little salt to finish if desired.
To make za’atar yogurt dip, add all ingredients together and whisk until smooth.
Serve immediately.
Note: You can sub frozen broccoli, just simply defrost it completely and squeeze out any excess liquid. These fritters also can be frozen by wrapping in plastic wrap and then storing in an airtight container.
