Yesterday was one of those days in motherhood where you question your sanity. Maybe you find yourself hiding in a closet for ten minutes so you can have a moment to breathe alone, or maybe you raised your voice and have a bit of mom guilt because of it. Maybe you aren’t a mom, but you had one of those days too where you just couldn’t wait for bedtime so you could wake up to a fresh new day. Either way, I feel you. Whenever I have a day like this, baking is something that brings me happiness in the midst of whatever chaos is going on. There is something so therapeutic about measuring and whisking and then smelling warm sweet goodness enveloping your home like a great big hug. I find that when I involve my son in the baking it instantly changes his mood too, it’s the ultimate distraction with the end result being so delicious. (Win-Win) My whole wheat zucchini tahini bread is our new favorite treat to make whether or not we are having a rough day and you are going to love it too!
I'm here to let you know that I am extending the weekend another day! And yes I have the authority to do that. This weekend went by too fast, which it always does, but this weekend really sped by and I am just not ready to go into full on weekday mode today! So today I am challenging myself and you to do one thing for yourself that you wouldn't normally allow yourself to do today. Self-care Monday should totally be a thing if you ask me! Take a bubble bath in the middle of the day, read a book for a little while, take a power nap, whatever it is..do it! I need that today, and I am guessing so do you! And you know what else we need today? A little comfort food, so let's make ourselves a spinach and artichoke grilled cheese and call it a day!
Happy Friday friends! I am so excited for the weekend and the fact that it is going to be cold again for a few days! Houston never gets this much cold weather in the winter so I am loving being able to make all the cozy food and wear all of my sweaters that have been in boxes since we moved here! When the weather shifts there few things I love more than baking in the kitchen. There is something about a warm and delicious treat right out of the oven that is so comforting and perfect on a chilly day! My healthy peanut butter and jelly oatmeal muffins are just the treat that you are going to want to make this weekend and every weekend from here on out!
